ABOUT Savoury Meatloaf Muffins RECIPE

These savoury meatloaf muffins are from Italian cuisine. Whether you have them for dinner or parties, surely they are bound to pep up your mood. They are easy to serve and healthy at the same time. One can even use Indian spices to suit the Indian palette.

Ingredients Serving: 6

  1. 250 gm mutton mince
  2. 2 medium onions finely chopped
  3. 1 tomato finely chopped
  4. 2 tablespoons ginger garlic paste 2
  5. 1/4 cup cooking oil
  6. 1/4 cup finely chopped carrot
  7. 1/4 cup finely red and yellow, capsicum
  8. 1/4 cup boiled elbow macaroni
  9. 1/8 cup boiled fresh green peas
  10. 1/4 teaspoon turmeric powder (optional)
  11. 1 teaspoon seven spice powder ( or garam masala )
  12. 1/2 teasoon garlic powder
  13. 1/2 Italian herbs mix
  14. 2- 3 teaspoon freshly ground coriander powder
  15. 1/2 tsp Cumin powder
  16. 1 teaspoon tsp oregano powder
  17. 2 large eggs
  18. 2 green chillies
  19. 1/4 cup coriander leaves finely chopped
  20. Salt to taste
  21. Cooking oil spray

Instructions

  1. Heat oil and saute onions
  2. Then add mince, salt , turmeric and green chillies. Saute for 5 minutes
  3. Add ginger - garlic paste, saute for a minute and add tomatoes. Saute nicely for 5 minutes.
  4. Now add 2 tsp coriander powder and 1/2 tsp seven spice powder
  5. By now the mince would have been cooked and changed to a brown colour
  6. In another bowl combine the boiled macaroni, capsicums, carrot, boiled peas, salt to taste, half teaspoon seven spice powder , italian herbs mix, garlic powder, oregano and coriander leaves. Tip in the 2 eggs and mix nicely
  7. Combine this mixture with the mince and mix nicely.
  8. Spoon the mince mixture into 6 muffin cups coated wth cooking oil spray
  9. Bake in a preheated oven at 2oo degrees Celsius for 30 minutes
  10. After 30 minutes if toothpick comes out clear from the muffin then it is done
  11. Seve hot with salsa, tomato ketchup or mayonnaise.
