ABOUT Jacket potatoes with stuffed Paneer RECIPE

Jacket potato is baked potatoes which has a fluffy interior and a crisp skin. It can be served with fillings such as cheese, bacon, sour cream, smoked meat etc. Its usually served in North America.

Ingredients Serving: 5

  1. 5 medium potatoes
  2. For stuffing: 1 cup paneer crumbled
  3. 1 small onion finely chopped
  4. 2 tsp finely chopped green chilly
  5. a pinch of turmeric
  6. Pepper as required
  7. 3/4 tsp Red chilli powder
  8. Salt to taste
  9. Other ingredients: For covering- Mashed potatoes
  10. 2 tbsp Milk
  11. 1 amul cheese cubes
  12. Salt to taste
  13. Olives, french beans, carrot, green portion of spring onion (for making face)

Instructions

  1. For the stuffing : Heat oil in a pan add chopped onion, saute till golden brown.
  2. Add chopped green chilli, paneer, pepper, turmeric, red chilli powder, salt to taste and a few leaves of chopped coriander. Mix everything well. Turn off the flame and keep it aside.
  3. Wash the potatoes very nicely, boil the potatoes (do not over boil) once cool, half the potatoes lengthwise. With the help of a spoon scoop out the centre. Reserve the scooped out portion as it will be used later.
  4. Stuff the potatoes with the paneer mixture.
  5. In a bowl add the scooped out portion, 2 tbsp milk, grated cheese and salt to taste. Beat it till smooth with the help of a beater. Spread this mixture to cover the stuffed potatoes.
  6. For making the face: Cut the carrot in round shape, olives in thin slices, chop the french beans and thin strips of green part of spring onion.
  7. Assembling: For the eyes place the carrot and olive on top of it. Make nose with the help of french beans and smile with the green part of spring onion. Once done microwave it for 5-6 minutes before serving. Serve hot.
