Ingredients Serving: 8

  1. Ghee 1/2 cup
  2. Ice cubes 7-8
  3. Maida 2 cups
  4. Milk 1/2 cup
  5. Cold Water 3 cups
  6. Lemon juice 1tbsp
  7. Ghee/ Oil/ Dalda to fry
  8. Sugar 1 cup
  9. Water 1/4 cup
  10. Saffron few leafs
  11. Kewda water optional

Instructions

  1. Take ghee and ice cubes in a big bowl and wisk them together with hands till ghee is creamy, whitish and lump free.
  2. Add maida and mix with ghee properly. Do not knead into a dough. Add lemon juice and mix well.
  3. Add milk and wisk it with hand. Make sure no lumps should be there
  4. Add cold water little by little. It should be of watery consistency.
  5. Heat the ghee in a deep, heavy bottom pan on medium high flame.
  6. Drop a ladel of the batter slowly but with steady hands from atleast 1 foot high
  7. Wait till the froth settles a little and then keep adding batter little by little in same way.
  8. Once the ghevar starts to leave the sides. Push it inside the ghee gently for a even color.
  9. Take out the ghevar and drain off the excess ghee by hanging it or placing them on a stand.
  10. In another pan, add sugar, plain water and kewda water Bring it to boil and make one string consistency.
  11. Add the sugar syrup on ghevar and drain off the excess sugar syrup.
  12. Let it cool a bit and decorate with rabdi and dry fruits.
