ABOUT KOCHI PANTHAR PATLA JHOL/ MUTTON IN LIGHT GRAVY RECIPE

This is another traditional bengali recipe wherein we like thin texture red gravy and big chunks of potatoes in it. Usually cooked in MUSTARD oil and whole onion or garlic bulb adds flavour to this traditional mutton curry.Usually every sunday its must have menu in every Bengali household

Ingredients Serving: 6

  1. 1 kg of mutton cuts.
  2. 3 to 4 potatoes cut into halves and fried.
  3. 1 big tomato.
  4. 4 big onions sliced.
  5. 3 tablespoon each of ginger garlic paste
  6. 3 tablespoon of kashimiri red chilli powder.
  7. 3 tablespoon of corriander powder.
  8. 1 tablespoon of garam Masala powder.
  9. Sugar and salt to taste.
  10. 5 tablespoons of mustard oil.
  11. 4 to 5 green chilli.
  12. Haldi powder and whole garam Masala.
  13. Olive oil for garnishing but its optional.
  14. 1 whole garlic bulb.

Instructions

  1. First heat a wide bottomed pan and pour the mustard oil.
  2. Add the whole garam Masala for tempering.
  3. Then add the onions and fry until it's brown. In it add the ginger garlic paste and saute.
  4. Add the powdered spices and saute for 5 mins.
  5. Then add the chopped tomato.
  6. Cool until the tomato is soft and mushy.
  7. Then add the washed mutton pieces and add salt to it.
  8. Cool the mutton till 15 to 20 mins by stirring continuously and until the oil separates from the Masala.
  9. Put in a pressure cooker and add enough water for the gravy.
  10. Cool until 4 whistles and then add the potatoes and the Whole GARLIC BULB.
  11. Again cook until 2 whistles. Put the gas of and wait till all the vapour comes out by it's own.
  12. Then add the green chillis to it and sprinkle lil olive oil from top and serve it.
