ABOUT Punjabi Rajma masala RECIPE

Rajma masala is a versatile receipe made by each one of us in our own ways. This one is the Punjabi style which is my personal favourite. You'll learn the tricks of a typical tasty rajma masala as you read on. Do try it once I'm sure you'll always stick to this receipe.

Ingredients Serving: 4

  1. Rajma 1 cup
  2. Onion 1 large
  3. Tomatoe 2 medium
  4. Ginger 1 inch
  5. Garlic 5 cloves
  6. Red chilli powder 1/2 tsp
  7. Roasted cumin powder 1/2 tsp
  8. Dhania powder 1 tsp
  9. Garam masala powder 1 tsp
  10. Cardamon seeds of 4 cardamons
  11. Sugar 1/2 tsp
  12. Oil 1 tsp
  13. Ghee 1 tsp
  14. Salt to season
  15. Coriander 3 tbsps
  16. Water sufficient for cooking

Instructions

  1. Soak rajma for 8 hours or overnight
  2. Chop onions and grind alongwith ginger and garlic to a fine paste
  3. Take a pressure pan. Add oil. Fry the onion paste till raw aroma leaves. Now add the tomatoes and all spice powders and ground cardamon seeds.
  4. Cover and cook till oil leaves the sides and seen over the masala.
  5. Now add the rajma. Add water till it is around 2 inches above the rajma. Season with salt.
  6. Pressure Cook for 8 whistles. Then simmer on low gas for 10 to 15 minutes.
  7. Uncover and add sugar, ghee and chopped coriander. Mix , Cover and leave for 5 to 8 minutes.
  8. Tastiest with phulkas but you can always have the typical rajma chawal loved by all
