Pav/buns as needed
For Vada :
Potatoes : 4 boiled
Onion : 1 chopped
Ginger garlic : 1 tbsp crushed
Mustard seeds : 1/2 tsp
Salt to taste
Red chilli powder to taste
chat masala to taste
Lemon juice : 1 tbsp
For batter :
Besan : 1 cup
Salt to taste
Red chilli powder to taste
Ajwain : 1/2 tsp
Turmeric powder : 1/2 tsp
Water for making thick batter
(Batter should not be too thick not too thin....it is like pakorda batter)
For vada pav chutney :
Garlic cloves : 10
Dry red chilli : 3
Coconut powder : 1/2 cup
Salt to taste
Cumin powder : 1 tsp
Instructions
Method for vada :
In a bowl mix Potatoes, Onion, Ginger garlic paste, Mustard seeds, Red chilli powder, Salt, Chat masala and Lemon juice. Now make small balls from potatoes. Keep aside.
Prepare batter :
Take besan in a bowl. Add salt, Red chilli powder, ajwain, turmeric powder and mix it. Add water and make thick batter like pakorda batter.
Heat oil in kadai. Take potato balls and dip them one by one in the batter and deep fry them till golden.
For vada pav chutney :
Dry roast garlic, dry red chilli and coconut powder separately. Cool it and add in mixer jar. Add salt and cumin powder. Grind it. Do not add water. Chutney is ready.
Take pav cut them from center. Take bottom half of pav, spread vada chutney on it and then keep vada and then close it with another half pav.
Vada Pav are ready to serve.
