ABOUT Luchi Aloor dum RECIPE

Ingredients Serving: 4

  1. For luchi- All purpose flour 3 cups
  2. Refined oil or ghee for moiyan 2 table spoon
  3. Ghee or oil for deep frying
  4. 1/2 teaspoon Salt and water
  5. For aloor dum- Potatoes medium size 400 g
  6. Cumin seeds 1 teaspoon , bay leaf 1
  7. Green cilli slits 3
  8. Onion chopped 1 medium
  9. Ginger paste 2 teaspoon
  10. Garlic paste 1 teaspoon
  11. Tomato puree 1/2 cup
  12. Salt, sugar and termaric as required
  13. Red cilli powder (optional) 1 teaspoon
  14. Garam mashala paste- 3 cardamom + 2 cloves + 1" stick cinnamon
  15. Chopped coriander hand full
  16. Oil for cooking 2 table spoon

Instructions

  1. Pill potatoes and cut on midle make two pieces
  2. Heat oil add cumin seeds and bay leaf. Fry until fried smell appears
  3. Add chopped onion and sugar then fry until golden brown in colour.
  4. Add ginger & garlic paste Fry add potatoes and mix well
  5. Add salt termaric powder and red cilli powder
  6. Stir it and add tomato puree mix and cover for few minutes
  7. Remove cover and stir add little water and stir. Add green cilli slits. When a nice smell of fried spices appears add 2 cups of warm water and cover with a lid.
  8. You can shift it to a pressure cooker and pressure cook it for about 15 minutes. Other wise cook it with a lid on low flame for about 25 minutes. Check in between.
  9. If potatoes well cooked then add garam mashala paste and cover it. Remove from the heat.
  10. Garnish with fresh chopped coriander.
  11. Luchi: In a mixing bowl take all purpose flour and mix salt
  12. Add moiyan (Ghee/ refined oil) mix well
  13. Add little water at a time and mix well. Make a dough. Knead the dough properly so that it will not to soft or hard.
  14. Make small balls of the dough
  15. Roll each balls with rolling pin and make round shape puries.
  16. Heat oil or ghee and deep fry the puries on medium flame.
  17. Drain excess oil and serve hot
  18. Serve hot luchies - aaloor dum with sweet Boondi/Rosgulla/Sandesh
