Ingredients Serving: 4
3 cup parboiled rice
1 cup urad dal
1 teaspoon Kasturi methi
Salt to taste
For potato chutney
1 cup boiled mashed potato
1/2 cup chopped onion
2 Chopped green chili
1 tablespoon oil
1 Tablespoon chopped garlic
5 Curry Leaves
1 tablespoon musterd seeds
Salt to taste
1/4teaspoon turmeric powder
For red chutney
1/2 cup chopped onion
1 cup chopped tomato
1/4 cup coconut powder
1 Teaspoon Chilli Powder
1/4 teaspoon turmirc powder
1 Tablespoon chopped garlic
Salt
1 teaspoon Musterd seeds
5 Curry Leaves
2 tablespoon Shezwan chutney
2 tablespoon butter
Instructions
For dosa batter
Soak rice and urad dal in separate bowls for 4-6 hours. and strain it .
Drain and grind rice and then grind urad Dal and kasturi methi to make smooth batter and keep it aside overnight to ferment.
To prepare chutney
Heat oil in a pan add the musterd seeds, curry leaves, chopped garlic, onion and saute for few minutes after that add mashed potato, salt, turmeric powder and mix well and cook it for few minutes
To prepare red chutney
In a pan heat some oil add onion and cook for few minutes then add chopped tomato cook it well add some coconut powder, chili powder, turmeric powder, salt and mix it well and cook for few minutes
Keep it aside for some time then grind it by adding some water.
Take another pan and heat the oil for some time add musterd seeds , chopped garlic, curry leaves, saute them and add this on the grinded chutney
To prepare dosa
Heat some butter in a pan and spread the dosa batter over it.pour the butter around the dosa and cook well.
Then apply shezwan chutney and add some potato chutney in the center and fold it
And serve hot with sambar and red chutney
