Makkhani moong sprouts (No onion & garlic)

ABOUT Makkhani moong sprouts (No onion & garlic) RECIPE

Moong dal sprouts cooked in butter with spices. I cooked it without onions and garlic.

Ingredients Serving: 6

  1. Moong sprouts (ankurit)- 200 g
  2. Butter 50g and little more
  3. Termaric powder 1 teaspoon
  4. Salt and sugar as required
  5. Kashmeri red cilli powder 1/2 teaspoon
  6. Pinch of asafortida or hing (optional
  7. Cumin seeds 1 teaspoon
  8. Bay leaf 1
  9. Tomato puree 3/4 cup
  10. Ginger 1" + cumin seeds 1 teaspoon- make paste
  11. Nutmeg powder 1/4 teaspoon
  12. 2 green cardamom pods cinnamon and 2 clove paste
  13. Kasuri methi 1 teaspoon (powder)
  14. Coriander powder 1 teaspoon
  15. Fresh cream 1/4 cup

Instructions

  1. Boil sprouts ( it will take 10- 15 minutes or up to 3 whistles in pressure cooker, don't over cook)
  2. Heat butter add one teaspoon of cooking oil with it.
  3. Add bay leaf cumin seeds , pinch of hing and a green cilli (sliced) fry for a minute
  4. Add tomato puree mix and stir for few seconds
  5. Add ginger cumin paste and fry until the fried aroma appears
  6. Add boiled sprouts and stir
  7. After 4-5 minutes Add termaric powder, coriander powder salt , kashmeri red cilli powder and sugar mix well.
  8. Cover it for 6 minutes on low flame
  9. Then remove the cover add 1cup of water. And cover again. You can use the water boiled with sprouts .
  10. Let it cook for 8-10 minutes
  11. Remove cover and add fresh cream, cardamom-cinnamon- clove paste mix and cover for 5 minutes more
  12. After that remove the cover add little more butter (optional)sprinkle nutmeg powder and cover. Then switch off the flame.
  13. Let it stand for few minutes.
  14. Garnish with fresh cream and serve hot with roti
