Delicious Coriander masala flavoured rice

Ingredients Serving: 3

  1. 1/2 onion chopped
  2. 2 green chillies
  3. 1 cup chopped coriander leaves
  4. 1/2 teaspoon pepper
  5. 1 inch cinnamon
  6. 6-7 cloves
  7. 1 tbsp ghee
  8. 1 bay leaf
  9. 10-12 cashews
  10. 1/2 onion sliced
  11. 1/2 tomatoes finely chopped
  12. 3-4 beans chopped
  13. 3 tbsp peas
  14. 1/3 carrot chopped
  15. 1/4 chopped capsicum
  16. 3 cups cooked rice
  17. 1 teaspoon salt

Instructions

  1. Blend coriander leaves, 1/2 onion chopped, cloves, cinnamon, peppercorns, green chilies with 2 tbsp water to form smooth paste. Keep it aside
  2. Heat ghee in a non-stick handi/ pan
  3. Add bay leaf and cashews. Fry until golden brown
  4. Add sliced onions and ginger garlic paste. Saute until onions are tender and raw aroma goes away
  5. Add tomatoes and cook until mushy
  6. Add chopped veggies and stir fry for a minute
  7. Add salt, ground coriander paste and mix well
  8. Cover and cook for 5 minutes
  9. Add rice and gently mix
  10. Cover and simmer for 2-3 minutes to absorb all masalas
  11. Serve hot with raita or salan
