Ingredients Serving: 3

  1. 3/4 cup roasted besan flour
  2. 1/2 teaspoon vanilla extract
  3. 1 egg
  4. 1/3 cup powdered sugar/grated jaggery
  5. 1/4 teaspoon cardamom
  6. 2 tbsp Canola oil
  7. 1/4 cup yoghurt
  8. 1/4 teaspoon baking powder
  9. 1/2 teaspoon baking soda

Instructions

  1. Preheat oven to 180 and line muffin tin
  2. Sieve dry ingredients and keep it aside
  3. Whisk egg, jaggery oil and yoghurt in a bowl. Jaggery brings in different flavour to muffin so you can use powdered sugar as substitute if you are not comfortable with taste of jaggery
  4. Add vanilla extract and cardamom. Whisk well
  5. Add dry ingredients and mix until well combined
  6. Pour batter into prepared muffin tin upto 2/3 level
  7. Bake for 14-18 minutes until done. Toothpick inserted into centre should be clean
  8. Allow to cool for 30 minutes. Demould.
  9. Dust with icicing sugar and serve warm or top with whipping cream and serve cold
