ABOUT Rose Nankhatai in Coconut Gravy RECIPE

A very unique and beautiful looking dish in which nankhatai is shaped into a rose and served in a shahi coconut gravy which includes flavour of cashews and cream which enhances it's taste a more. No added artificial colors as natural green leafy bathua is used and thus it is very healthy due to the presence of coconut milk as well. Would be loved by all age groups.

Ingredients Serving: 4

  1. For nankhatai-
  2. All purpose flour, 1cup
  3. Bathua puree, 2-3tsp
  4. Cardamom powder, 1tsp
  5. Ghee, 1/4cup
  6. Sugar powder, 3/4cup or to taste
  7. Baking soda, 1/2tsp
  8. For gravy-
  9. Coconut milk, 1 cup
  10. Coconut powder, 1/4 cup
  11. Onion, 1 big, sliced
  12. Garlic cloves, 3-4tsp
  13. Ginger, 1/2inch, grated
  14. Cashews, 5-6
  15. Fresh cream/malai, 1/2bowl
  16. Mustard seeds, 1tsp
  17. Red chilli powder, 1tsp
  18. Salt, to taste

Instructions

  1. Take ghee in a bowl and whisk it well until fluffy.
  2. Add in sugar powder and whisk well again.
  3. Now add bathua puree and mix well.
  4. Now add all purpose flour, cardamom powder, baking soda and mix well and prepare dough.
  5. Take out small balls and flatten them with your hands.
  6. Take 4 flat pieces and keep over another overlapping half way.
  7. Roll it from one corner like a carpet and cut in middle.
  8. Your 2 roses are ready.
  9. Similarly prepare all the pieces.
  10. Now cook them in microwave for around 12-14 minutes.
  11. Your nankhatais are ready.
  12. Keep them aside.
  13. Now let's prepare gravy and for that take a non stick pan and add 1/2tsp oil.
  14. Add onions, ginger and garlic and roast them until slight golden brown.
  15. Let it cool for 1/2 minute.
  16. Now take this mixture in a grinder and add cashews and grind them coarsely.
  17. Now in the same pan add little more oil then add mustard seeds and let it crackle.
  18. Now add red chilli powder, onion paste, coconut powder and cook for 2-3 minutes.
  19. Now add in coconut milk and give a boil.
  20. Add in malai and give a stir and cook for a minute or two.
  21. Add in salt and mix and switch off the flame.
  22. Your delicious gravy is ready.
  23. Take a serving dish and pour in gravy then put the nankhatais over it and serve.
  24. Enjoy this beautiful and tempting dish.
