This a an experimental dish prepare on a lazy day. I had lot of coconut at my fridge so I used the milk and the grated coconut to make sometime delicious

Heat oil in a pan add Garam masala for tempering .
Now add onion ginger garlic chilli paste , bay leaves and sauté till the rawness absorbed.
Add turmeric , cumin powder , chilli powder , hung curd , pepper , green chilli, salt and sugar and stir fry until the oil releases.
Now add the coconut milk and sauté , sprinkle kasuri methi and ghee and cook for some more minutes .
For thick gravy u can add the remaining coconut paste.
When the gravy become thick add the eggs from the top in a poach form so that the egg remain intact . Sprinkle some salt on the poach and cover the lid for few seconds .
Garnish with chopped coriander and serve with rice , roti or paratha .
