ABOUT Eggless Coconut Bundt Cake With Chocolate Glaze RECIPE

Ingredients Serving: 6

  1. 1 cup refined flour (maida)
  2. 1/2 cup shredded fresh coconut
  3. 3/4 cup powdered sugar
  4. 1/2 cup yoghurt
  5. 1/2 cup oil
  6. 1/4tsp vanilla essence
  7. 1 tsp baking pd
  8. 1/2 tsp baking soda
  9. 1/4 tsp salt
  10. Oil or butter to grease the pan
  11. For chocolate glaze
  12. 1/2 cup chocolate (dark or milk chocolate compound u can use)
  13. 2 tbsp fresh cream
  14. 1 tsp butter
  15. 1 tbsp milk
  16. 1/4 cup coloured shredded dry coconut to garnish

Instructions

  1. Pre heat oven to 180 degree
  2. Grease bundt pan
  3. In a large bowl combine together refined flour, baking pd, baking soda, salt
  4. In another bowl add yoghrut, sugar mix well then add oil, vanilla essence & beat till smooth
  5. Pour the dry ingredients into wet mixture & stir gently to combine
  6. Fold in the shredded coconut. If the mixture seems dry add a bit more yoghurt
  7. Pour the batter into greased bundt pan
  8. Tap pan 4 - 5 times
  9. Bake the cake for around 25 - 30mins or once a toothpick inserted in a cake comes out clean
  10. Cool on a wire rack
  11. Pour chocolate glaze upon cake and garnish with coloured dry shredded coconut
  12. To prepare chocolate glaze : in a microwave bowl add chocolate compound, fresh cream, milk and butter & microwave it for 30 sec
