ABOUT Coconut Soup RECIPE

This coconut soup is light and tasty & it perfectly balances the sweet, salty and spicy flavours. This soup is flavoured with the delicious fragrances of lemongrass

Ingredients Serving: 2

  1. 250 gms boneless chicken
  2. 1 big cup coconut milk
  3. 1 tbsp chopped garlic
  4. 1 tbsp chopped ginger
  5. 1 lemon grass leaf
  6. 2 tbsp lemon juice
  7. 1 tbsp greens of spring onion
  8. 1/4 tsp ginger pwdr
  9. Salt & pepper pwdr

Instructions

  1. Boil Chicken with salt, pepper, ginger & half of garlic i.e 1/2 tbsp
  2. Using a sieve keep boiled chicken pieces aside & in the a pan keep the stock.
  3. To stock add coconut milk, remaining garlic & lemon grass cut into pieces. Bring to boil & lower the heat.
  4. Let it all boil on low flame for 10 minutes. (If you want can remove the lemon grass pieces) Add chicken pieces & cook for 5 minutes.
  5. Add salt, pepper, ginger powder, lemon juice & green of spring onion & cook for 2 minutes. Serve hot.
