Mixing dry ingredients : Mix maida ,urad dal powder,ENO and ghee well until it is uniformly mixed well.
Sugar syrup : Add sugar , water to cover sugar ,rose water and food colour.Boil it until it is just thick.
Batter : Mix the jalebi mix with little water to get a very thick batter.
Making jalebi : Heat oil in medium flame.Transfer the batter to a sauce bottle or a piping bag and squeeze to oil.Fry until crisp and transfer immediately to the syrup .Dont wait to remove the oil transfer immediately to syrup and sink it with a ladder.
serving : jalebi should rest in syrup for 5 mins and drain excess of syrup and serve with nuts.
