Avocado , the powerhouse of vitamins is a gift . Specially during monsoons , this fruit provides ample Heath benefits preventing from unnecessary infections . To make eating avocados interesting and double yummier bake an egg in it with an Italian touch . Who will say no to this delicious treat ?

Ingredients Serving: 2

  1. Avocado 1 large
  2. Large eggs 2
  3. Thyme 1.5 + 1.5 pinches
  4. Salt 1 + 1 big pinches
  5. Red tomato chopped 2 teaspoons
  6. Scallions finely chopped 1 tablespoon
  7. White pepper powder as preferred
  8. Mozzarella shredded cheese as required
  9. Parsley finely chopped for sprinkling

Instructions

  1. Cut an avocado into two halves . Discard the seed.
  2. Preheat a cooker for 5 minutes in medium to high heat .
  3. Now in each avocado pit , pour eggs . 1 egg in 1 half . Another egg in another half .
  4. Sprinkle salt , tomato pieces , thyme , white pepper powder in both the eggs .
  5. Add scallions and parsley .
  6. Place the avocados on a baking tray / plate .
  7. Place the tray inside the preheated cooker . Cover and bake for 10 minutes in low heat .
  8. Baked Avocado eggs are ready . Top it up with shredded mozzarella cheese . Keep the cooker covered for 2 minutes until cheese melts .
  9. Serve hot .
