ABOUT Mint chakli/murukku RECIPE

Chakli is a deep fried snack made from rice flour, gram flour, wheat flour or a mixture of lentil flours. They are also known as murukku in south. Here fresh mint leaves are used along with rice flour and spices to make these chaklis.

Ingredients Serving: 3

  1. Mint leaves 1bunch
  2. Rice flour 1cup
  3. Green chilli 2-3
  4. Lemon juice 1 tsp
  5. Butter 1/4cup
  6. Sesame seeds 2tbsp
  7. salt as per taste
  8. Warm water 2-3tbsp or more as needed
  9. Oil for deep frying as needed

Instructions

  1. Clean and pat dry the mint leaves.
  2. Put leaves in a blender along with green chilli and lemon juice. Don't use the stems.
  3. Grind to a fine paste. If required add little water. It should be thick not watery.
  4. Mix rice flour, sesame seeds, salt, butter in a mixing bowl and mix well using fingertips.
  5. Add the mint paste and mix.
  6. Add hot water and mix well using a spoon.
  7. Add more hot water as required and begin kneading.
  8. Knead to a dough which is firm.
  9. Cover and rest it for 30mins.
  10. Apply some water in the chakli/murukku maker and place a portion of the dough inside it.
  11. Tighten the lid and press the chakli maker to prepare the chakli. Use the star nozzle.
  12. Move in rounds to get a spiral shape.
  13. Make the chaklis on butter paper or aluminium foil, so that it's easy to remove them.
  14. Heat oil in a kadai.
  15. Lift the chakli gently and slid into the hot oil.
  16. Fry 3 to 4 chaklis at a time. don't over crowd the kadai while frying.
  17. Flip and cook the other side too.
  18. Drain them on paper towels to remove excess oil.
  19. Repeat the same process for the rest dough.
  20. Serve chaklis plain as a snack with some hot tea.
