ABOUT Spinach Corn Quesadilla RECIPE

Its a popular Mexican snack made with the twist of spinach, corn and cheese.. Goes well with freshly made salsa and sour cream.

Ingredients Serving: 2

  1. For the tortillas: 1 cup maida
  2. /1/2 tsp salt
  3. 1/2 tsp oil
  4. Water
  5. For the stuffing: 1/2 bunch of spinach
  6. 1/2 cup corn
  7. 1/2 cup grated paneer
  8. 1/2 cup mozzarela cheese
  9. Black pepper as required
  10. Salt to taste
  11. For the salsa: 1 small tomato finely chopped
  12. 3-4 tbsp chopped onions
  13. 1 tbsp lemon juice
  14. Pinch of oregano
  15. Black pepper as required
  16. Salt to taste

Instructions

  1. For the tortillas: knead the dough with the ingredients mentioned.
  2. For the stuffing:
  3. Wash the spinach nicely then boil it for 4-5mins. When cooled down squeeze out the water & finely chop it. 2.Also boil the corn for 4-5mins. 3.Then in a bowl add chopped spinach, corn, grated paneer, cheese, salt and pepper and mix it well.
  4. For the Salsa: In a bowl combine all the ingredients of the Salsa mix it well and keep aside.
  5. Take the dough divide it into equal proportion. Roll it out in a circle. Heat non stick pan add few drops of oil then cook the tortilla from both the sides on medium heat. Add the stuffing on one side of the tortillas then fold it in half and cut it from the middle. Repeat the same process for making more quesadilla. Serve with Sauce, Mayonnaise &Salsa.
