Ingredients Serving: 4

  1. Ripe mangoes - 4 big
  2. Oil - 1, 1/2 tablespoons
  3. Curry leaves - 1 sprig
  4. Turmeric powder - 1/4 teaspoon
  5. Peppercorns - 8-10
  6. Fenugreek seeds - 3/4 teaspoon
  7. Dried red chillies - 4-5
  8. Mustard seeds - 1/2 teaspoon
  9. Coriander seeds - 1 teaspoon
  10. Cumin seeds - 1 teaspoon
  11. Fennel seeds - 1 tablespoon
  12. Garlic - 4-5 cloves
  13. Ginger - 1 inch piece
  14. Onions - 2 medium (roughly chopped)
  15. Jaggery - 2 tablespoon
  16. Tamarind paste - 2 tablespoon
  17. Water - 1 cup
  18. Salt - to taste

Instructions

  1. dry roast all spices (pepper, dry Red Chillies, mustard, coriander, fenugreek, fennel and cumin seeds) until they become fragrant.
  2. then grind the spices along with the ginger, garlic and onions into a fine paste.
  3. chopped the mangoes into medium sized cubes.
  4. heat oil in a pan and add curry leaves along with the turmeric powder.
  5. then add paste and salt and cook until the oil comes to the surface.
  6. now add water and let it come to boil, then add mangoes jaggery and tamarind paste.
  7. cook for 5 to 10 minutes more taste to adjust the curry to your liking.
  8. serve hot.
