ABOUT Ghee Masala Dosai RECIPE

Ghee masala dosai is a favourite of many.Its made by stuffing potato masala inside the dosai.

Ingredients Serving: 4

  1. For the dosa batter.
  2. Par boiled rice (puzhungal arisi) 1 1/4 cup
  3. Raw rice 1 1/4 cup.
  4. Urad dal 1/2 cup.
  5. Fenugreek seeds 1 tesp.
  6. Salt as needed.
  7. For Filling
  8. Mashed potatoes 2 cups.
  9. 1 large onion thinly sliced.
  10. 1" ginger minced.
  11. 2 green chilli slit.
  12. 1 tomato chopped.
  13. Turmeric powder 1 /4 tesp.
  14. Few curry leaves.
  15. 1 tesp chopped coriander leaves.
  16. Salt as per taste.
  17. 1/2 cup water.
  18. Seasoning
  19. Oil 3 tesp
  20. Mustard seeds 1/2 tesp.
  21. 1 tesp urad dal.
  22. 1/2 tesp channa dal.
  23. 1/4 tesp asafoetida.
  24. Ghee to make the dosai.

Instructions

  1. Wash and soak both rice ,dal and fenugreek seeds in enough water for 4 hours.
  2. Grind to a smooth batter adding little water( in a wet grinder or mixi).
  3. Remove add salt,mix well with your hand . Cover and let fermant.The batter will rise.
  4. Now the batter is ready to make dosai
  5. Place a pan on medium heat,add oil.
  6. Add the seasoning let splutter.
  7. Now add curry leaf,ginger,chilli and onion.
  8. Saute till onion is soft.
  9. Add tomato saute till half mushy.
  10. Add turmeric powder and salt,mix well add water and let boil.
  11. When it starts boiling add potato and mix well,let cook for 5 minutes till thick.
  12. Mix a little water to the batter if too thick.
  13. Place tawa on medium heat.
  14. Add a laddle of batter in the centre spread in a circular motion.
  15. It should be thin.
  16. Drizzle ghee on it and around.
  17. Once it turns a bit crispy add 2 to 3 tbsp of the masala in the centre and spread lengthwise.
  18. Fold one side to the centre and the other side slightly overlapping it.
  19. Remove place on a plate with little butter,
  20. Serve hot with chutney.
