Ingredients Serving: 6

  1. For Eggless Pav :
  2. Warm Milk - 200 ml
  3. Yeast -2 tsp
  4. Maida - 2 cups
  5. Salt -3/4 tsp
  6. Sugar -1 tbsp
  7. Milk powder - 2 tbsp
  8. Butter -4 tsp (room temperature )
  9. Oil -1 tsp
  10. Milk & Butter -For brushing
  11. For Dry Red Chutney :
  12. Garlic cloves - 10
  13. Grated Coconut - 1/2 cup
  14. Salt -to taste
  15. Roasted peanuts - 1 tbsp
  16. Roasted sesame seeds -1 tbsp
  17. Coriander powder -1 tsp
  18. Kashmiri Red chilli powder -2 tsp
  19. Oil -1 tsp
  20. For Vada :
  21. Cooked & Medium sized Potatoes -5
  22. Mustard seeds -1 tsp
  23. Cumin seeds - 1/2 tsp
  24. Turmeric powder -1/ tsp
  25. Salt -to taste
  26. Lemon juice -1 tsp
  27. Chopped coriander leaves -1 tbsp
  28. Hing - a pinch
  29. Curry leaves -1 sprig
  30. Crushed green chillies& ginger paste -1 tsp
  31. Coriander powder -1/2 tsp
  32. Oil - For frying + 1 tbsp
  33. For batter :
  34. Besan flour - 2 cups
  35. Turmeric Powder -1/2 tsp
  36. Cooking soda -2 pinches
  37. Salt -to taste
  38. water -as needed
  39. Red Chilli Powder -1 tsp
  40. Other Ingredients :
  41. Green chutney - 1/4 cup
  42. Sweet chutney -1/4 cup
  43. Butter -1/4 cup

Instructions

  1. For Pav : In a bowl mix yeast,sugar with warm milk to proof the yeast.In a kitchen counter table Place the Maida,salt,mil powder.Make a dent add the yeast proof milk.
  2. Mix it well.The mixture is sticky now.Add the butter ,knead it with your palms for 10 minsNow the whole mixture comes to a mass.Place it in a oil greased bowl,cover with damp cloth.
  3. Place it in a warm place.After 1 h 30 mins,the mixture is double in size,punch it down.Greaste the baking pan,Make the dough in equal sized balls.Roll it smooth dough without any cracks.Place it greased tray and gain cover with damp cloth.
  4. Keep it for 30 mins.Preheat the oven at 180 °C.Brush the buns with milk and bake it for 20-25 mins until the top is golden brown.Then brush it with melted butter.Now the Pav is ready !!
  5. For Dry red chutney : Heat oil in pan roast the garlic ,keep it aside.Then roast the grated coconut until the moiture is gone.Once it completely cooled down,Grind it with other ingredients to a coarse powder.
  6. For Vada : Peel and mash the potatoes well.Heat 1 tbsp oil in a kadai temper with mustard seeds,cumin seeds,hing and curry leaves.Then saute with crushed green chilli&ginger paste.
  7. Once the raw smell goes away add the mashed potatoes,salt,turmeric powder,coriander leaves.Finally add the lemon juice and mix it well .
  8. Make equal sized lemon balls and keep it ready.For the batter ,mix the all ingredients given under"For Batter" .The batter should be thick.
  9. Dip the each balls in batter and deep fry them in hot oil until golden brown .
  10. Take the pav,slit it horizontally into 2 equal halves and keep one side is connected.
  11. For Vada Pav : Heat 2 tsp Butter in a pan ,add 2 tsp dry red chutney.Mix and Roast the pavs inner side and press it slightly until light brown on medium flame.
  12. Place green chutney on one side and sweet chutney on another side .Place the vada inside the pav.Serve it Hot !!
