Ingredients Serving: 5

  1. 3-4 boiled & mashed potatoes
  2. 1 cup assorted frozen vegetables or fresh vegetables according to your preference.( I have used boiled corn, greenpeas , carrots, few cauliflower florets and some french beans)
  3. A few green chillies finely chopped
  4. 1/2 finely chopped red pepper
  5. 1/2 finely chopped yellow pepper
  6. Handful of corriander finely chopped
  7. 1-1/2 cup grated cheese
  8. 1 tsp Lemon juice
  9. 1 -2 tsp Chillie flakes
  10. 1 tblsp fresh bread crumbs for binding
  11. a few small cubes of cheese (opt)
  12. Salt and pepper to taste
  13. 1/2 cup dried bread crumbs or corn flour for coating the nuggets

Instructions

  1. Take a bowl and very lightly mix all the above ingredients ; vegetables + grated cheese + seasonings and fresh bread crumbs. Shape them into nuggets.
  2. If you want them to be more cheesy, spread the Potatoe mixture on your palm and add in one cube of cheese and give it shape. Coat the nuggets with dried bread crumbs and freeze them for at least 1/2 an hour.
  3. Heat oil and shallow fry the nuggets by dipping them in beaten egg or in a thin cornflour slurry. Serve them hot.
