ABOUT Mutton bhuna masala RECIPE

A spicy mutton curry, made with curd and spices, to be served with some naan or roti on the side.

Ingredients Serving: 4

  1. Mutton - 200 gm
  2. Sliced garlic cloves - 10
  3. Chopped ginger - 1 tbsp
  4. Sliced onion - 2
  5. Turmeric powder - 1 tsp
  6. Chilly powder - 1 tsp
  7. Coriander powder - 1 tsp
  8. Curd - 1/4 th cup
  9. Coriander leaves (handful)
  10. Ghee
  11. Salt
  12. Whole masalas :
  13. Bay leaf - 1
  14. Cumin seeds - 1 tsp (shahi jeera also can be used for extra richness)
  15. Dry red chillies - 2
  16. Pepper corns - 10
  17. Cardamom - 2
  18. Cloves - 1
  19. Cinnamon - 1
  20. Mace blade - 1
  21. Nutmeg (crushed or powdered) - 1/4 th tsp

Instructions

  1. Heat a heavy bottomed pan with some ghee. Add the whole garam masalas and let them smell.
  2. Then add the sliced garlic and ginger, saute until golden.
  3. Add the sliced onion and cook until translucent. Then add the mutton pieces and stir.
  4. Cook for few minutes on high flame and then add the curd.
  5. Lower the flame, cover with a lid and let the mutton cook. Once the mutton is half done, then add the powdered spices, salt.
  6. Cook until the mutton is done. Then add some more ghee and keep frying for few minutes..
  7. Once the Masala leaves enough oil, check for seasoning and garnish with coriander leaves. Serve.
