ABOUT Araithuvitta Sambar RECIPE

This sambar is made out of home made paste.It tastes awesome with chapathipoori,idli,dosa etc..

Ingredients Serving: 6

  1. 1 cup toor dal
  2. 2 Cups Water
  3. 3 ripe tomato chopped
  4. Onions(shallots) 15
  5. 3 tbsp oil
  6. 1 tbsp ghee
  7. 1 1/2" piece drumstick 12 peices
  8. Sliced carrot and radish 1 each
  9. 6 beans chopped
  10. 1/2 tesp turmeric
  11. salt as per taste
  12. 2 Cups Water
  13. Seasoning ( 1/2 tesp each mustard,urad dal,cumin seeds,1/4 tesp fenugreek, 1/2 tesp asafodita,2 dry red chilli,few curry leaves)
  14. Sambar paste : 1 1/4 tbsp chana dal,1/2 tesp each of pepper corns and cumin,1/4 tesp fenugreek,2 tbsp coriander seeds,8 dry red chilli and 2tbsp of grated coconut,1 tesp oil)
  15. Small piece jaggery
  16. Tamrind juice slightly thick 4 tbsp

Instructions

  1. Pressure cook toor dal with 2 cups of water and chopped tomatoes
  2. Remove let cool, grind it in a mixi jar to a paste and set aside.
  3. In a pan add 1 tesp oil roast chana dal,pepper,cumin, fenugreek,coriander seeds,dry red chilli for 2 minutes in low flame
  4. Transfer it to a plate and in the same pan saute grated coconut for few seconds and add it to the roasted ingredients.
  5. Let cool ,make a paste of this with little water in a mixer jar,set aside
  6. In a deep cooking pan add 3 tbsp oil place on medium flame
  7. Add mustard,urad dal, cumin, fenugreek and dry chilli once it splutters add asafodita and curry leaves.
  8. To this add onion shallot and saute till soft
  9. Add all the vegetables mix well,to it add turmeric ,salt and 2 cups of water .
  10. Cover and cook the vegetables
  11. Once cooked add the toor dal paste and tamarind juice ,let boil for 5 minutes
  12. Now add in the ground sambar paste mix let boil for another 5 to 8 minutes
  13. Add in the jaggery piece,1 tbsp ghee mix well,garnish with coriander leaves.
  14. Arrituvitta Sambar ready.
