ABOUT Yogurt Millet Pancakes RECIPE

These pancakes include yogurt and butter milk as vital ingredients . I have incorporated gluten free millet to make these pancakes much healthier . Best breakfast /tiffin box option . This is one way to feed yogurt indirectly to children who doesn’t prefer taking yogurt happily .

Ingredients Serving: 10

  1. Foxtail millet flour 1 cup equals 200 ml
  2. Brown sugar 3 tablespoons ( adjust as per taste )
  3. Fresh yoghurt 1/2 cup
  4. Buttermilk 1/4 cup
  5. Milk 2 tablespoons to adjust consistency.
  6. Vanilla essence 1 teaspoon
  7. baking powder 3/4 teaspoon
  8. Ghee 3 tablespoons
  9. Black raisins for garnishing
  10. Sugar syrup for garnishing ( optional )

Instructions

  1. In a bowl , take sieved millet flour .
  2. Add brown sugar .
  3. Add baking powder .
  4. Add yogurt and mix using a spatula .
  5. Add buttermilk .
  6. Add vanilla essence .
  7. Whisk gently to form a smooth lump free batter .
  8. Add milk to adjust consistency.
  9. Heat a pan .
  10. Pour half ladle batter into mini pancakes .
  11. Drizzle ghee .
  12. Cover and cook for 30 seconds in medium heat .
  13. Flip when the lower side turns golden brown .
  14. Repeat the steps to cook rest of the pancakes .
  15. Stack the pancakes .
  16. Top it up with black raisins .
  17. Drizzle sugar syrup if preferred .
  18. Enjoy .
