ABOUT Kerala Rose Cookies RECIPE

Kerala Rose Cookies also known as Achappam/Acchumurukku are famous deep fried cookies from Kerala. They are crunchy, crispy and have nice golden brown colour. They are mostly made for special festivals like Christmas, Onam and Vishu. Although they are available in shops I wanted to make an egg less version as store bought ones have eggs. I don’t have any problem with eggs though while frying these the smell bothers me a lot. These are not very easy to make, but once you get hold of the correct method you will perfect them. So here’s the recipe of Kerala Rose Cookies.

Ingredients Serving: 10

  1. 1 cup rice flour (100 grams)
  2. 1/3 cup maida
  3. 1/3 cup + 3 tbsp sugar
  4. 1 tsp sesame seeds
  5. 150 ml coconut milk
  6. Little water
  7. Pinch of salt
  8. Cardamom powder
  9. Cookie moulds/ flower mould
  10. Oil for frying

Instructions

  1. In a vessel make batter from rice flour, maida,sugar, sesame seeds, cardamom powder, salt and coconut milk. The batter should be free flowing. If your batter is too thick only then add in water to adjust the consistency.
  2. Now heat oil and place your mould inside the oil, so that the mould gets greased.
  3. Let it heat for some time. Then dip it in batter not fully only 3/4 portion should be in batter.
  4. Now drop this in the hot oil carefully.
  5. Give it a shake to unmould it.
  6. Now fry it till golden brown. Every time you have to first heat the mold and dip in the batter. Other wise the batter won’t stick to the mould.
  7. Serve in room temperature.
