Home style mutton briyani,Dalcha,Egg pepper roast,onion raitha& bread sweet or bread jam. These dishes are made from everyday ingredients but packed full of exciting flavors.

Ingredients Serving: 10

  1. Mutton dum briyani
  2. Home style briyani masala:-
  3. Cardamom-8
  4. Cloves-8
  5. Cinnamon -3-4, small pieces
  6. Poppy seeds -2 tsp
  7. White pepper-1 tsp
  8. cumin seeds -1 tsp
  9. Fennel seeds -1 tsp
  10. Slightly dry roast and powder together.
  11. Basumati rice - 1.5 kg
  12. Mutton 1.5-2 kg
  13. Oil- 200 -250 ml
  14. Ghee -100 - 150ml
  15. Whole cardamom,cloves,cinnamon-each 4 pieces
  16. Bay leaves-2
  17. Ginger garlic paste -5 tbsp
  18. Green chillies -8-10
  19. Onion- thinly sliced -600 gm
  20. Tomatoes -600 gm
  21. Red chilli powder-2-3 tsp
  22. Curd- 1 cup
  23. Lime -1
  24. Chopped coriander,mint leaves- each one cup
  25. Saffron2 pinch or orange red colour
  26. Salt - To taste.
  27. Next mutton dalcha ingredients:-
  28. Mutton bone-200 gm
  29. Toor dal-100gm,channa dal-50 gm
  30. Brinjal-250 gm
  31. Mango small-1
  32. Ash gourd - few pieces
  33. Onion big-1
  34. Tomato big-1
  35. Green chilli -2
  36. Turmeric powder-1/2 tsp
  37. Chilli powder1 tsp
  38. Coriander Powder-1 tsp
  39. Fennel,cumin powder-each 1/2 tsp
  40. Coriander,mint curry leaves
  41. Ginger garlic paste-2-3 tsp
  42. Garam masala-1/2 tsp
  43. Tamarind -small lemon size
  44. Salt -to taste
  45. For tempering :-
  46. Oil -1 tbsp
  47. Mustard,urad dal-1 tsp
  48. Dry red chilli-2
  49. Chopped onion - 1 tbsp
  50. Few curry leaves.
  51. Egg pepper roast:-
  52. Eggs -10-12
  53. Gingelly or coconut oil-2 tbsp
  54. Turmeric powder - 1/2 tsp
  55. Chilli powder-1/2 tsp
  56. Cumin powder-2 tsp
  57. Pepper powder- 3-4tsp
  58. few curry leaves
  59. Salt - To taste.
  60. Bread halwa:-
  61. Bread 12 slices
  62. Sugar-300 gm
  63. Cardamom-5
  64. Water-900 ml
  65. Kesari powder-pinch
  66. Ghee-2+2 tbsp
  67. Cashews 20,raisins- 20.
  68. Onion raitha Ingredients:-
  69. Onion - 1/2 kg
  70. Yogurt 1 kg
  71. Green chilli chopped-2
  72. Chopped Coriander leaves-2 tbsp
  73. Salt - To taste.

Instructions

  1. Mutton or chicken Briyani preparation:- Rinse mutton or chicken thoroughly and drain it. Mix curd,chilli powder,half briyani masala 2 tbsp gg paste and salt to taste. Marinate for 1 hour . Mean while cut all the veggies keep ready. Rinse and soak the rice .
  2. Pressure cook the marinated mutton for 3 whistles.
  3. Heat oil & ghee in a heavy bottomed vessel.add whole cardamom,Clove and cinnamon,then fry onion till golden brown.
  4. Add remaining gg paste and home style briyani masala,green chilli,half chopped coriander and mint leaves.
  5. Then add chopped tomatoes,1 tsp chilli powder and salt to taste.close with lid for five minutes,let the tomatoes cooked till soft.
  6. Add cooked mutton,stir well and close, allow to boil.squeeze half lime juice.
  7. Meanwhile boil enough water in a big vessel,add rice,salt, 1 tbsp oil, transfer the soaked rice ,cook till 75 percent done.Drain it.
  8. Then cover the mutton masala with drained cooked rice ,squeeze half lime and smooth surface gently.
  9. Sprinkle the saffron milk or colour added milk over the rice,add a tbsp of ghee.
  10. Place the sheet of aluminium foil on top.cover and steam it over a very low flame.Allow it to dum for20 minutes.Switch off.
  11. Keep closed for another 15 minutes.
  12. Garnish the briyani with fried onions and nuts( optional)
  13. While serving mix gentle,serve hot.Delicious Mutton dum briyani ready For chicken briyani ,directly cook chicken pieces in the briyani vessel for 5 -10 minutes.
  14. For Dalcha :- In a pressure cooker add,toor dal,channa dal,,2tsp gg paste,mutton with bone,garam masala,1/2 tsp turmeric powder.cook till soft.
  15. Open ,add all veggies,add all masala powders.Add some water and allow it to boil.Add tamarind water.Add salt to taste ,cook for 1 -2 whistle.
  16. Mean while boil the eggs for roast.Peel the boiled eggs and put line with knife.
  17. After pressure release open the cooked dalcha carefully.
  18. Then heat oil in a pan,add mustard urad dal,dry chilli,curry leaves,when it splutters add chopped onion,1 tsp gg paste fry till light golden colour.Transfer to the dalcha and switch off. Ready. Serve with mutton briyani.
  19. For egg pepper roast heat oil,add curry leaves add all masalas and salt to taste, stir once.Add the boiled egg gently roast it,switch off.garnish with coriander leaves. Ready.
  20. For bread halwa or bread sweet ,toast all the bread slices with ghee and shred it.
  21. Pour required water in a heavy sauce pan to boil,add pinch kesari powder, transfer the shredded toasted bread. Mix gently.
  22. Add sugar, cardamom powder or (slit and put)mix till it dissolves.Mix till bread sweet get thick consistency.
  23. Garnish with ghee fried cashews and raisins. Bread sweet ready.
  24. For onion raitha slice the onions thin,add chopped chilli,coriander leaves,thick yogurt ,add salt to taste.mix ,ready! serve with briyani.
  25. Now mutton briyani,dalcha,egg roast,onion raitha,,bread sweet ready.
  26. Serve and enjoy these Eid special dishes.
  27. Serve this traditional eid mutton dum briyani in banana leaf, raitha,egg roast, and bread sweet. Serve dalcha if need. You can add Chicken fry also in the menu .
