Home style mutton briyani,Dalcha,Egg pepper roast,onion raitha& bread sweet or bread jam. These dishes are made from everyday ingredients but packed full of exciting flavors.

Ingredients Serving: 10
Mutton dum briyani
Home style briyani masala:-
Cardamom-8
Cloves-8
Cinnamon -3-4, small pieces
Poppy seeds -2 tsp
White pepper-1 tsp
cumin seeds -1 tsp
Fennel seeds -1 tsp
Slightly dry roast and powder together.
Basumati rice - 1.5 kg
Mutton 1.5-2 kg
Oil- 200 -250 ml
Ghee -100 - 150ml
Whole cardamom,cloves,cinnamon-each 4 pieces
Bay leaves-2
Ginger garlic paste -5 tbsp
Green chillies -8-10
Onion- thinly sliced -600 gm
Tomatoes -600 gm
Red chilli powder-2-3 tsp
Curd- 1 cup
Lime -1
Chopped coriander,mint leaves- each one cup
Saffron2 pinch or orange red colour
Salt - To taste.
Next mutton dalcha ingredients:-
Mutton bone-200 gm
Toor dal-100gm,channa dal-50 gm
Brinjal-250 gm
Mango small-1
Ash gourd - few pieces
Onion big-1
Tomato big-1
Green chilli -2
Turmeric powder-1/2 tsp
Chilli powder1 tsp
Coriander Powder-1 tsp
Fennel,cumin powder-each 1/2 tsp
Coriander,mint curry leaves
Ginger garlic paste-2-3 tsp
Garam masala-1/2 tsp
Tamarind -small lemon size
Salt -to taste
For tempering :-
Oil -1 tbsp
Mustard,urad dal-1 tsp
Dry red chilli-2
Chopped onion - 1 tbsp
Few curry leaves.
Egg pepper roast:-
Eggs -10-12
Gingelly or coconut oil-2 tbsp
Turmeric powder - 1/2 tsp
Chilli powder-1/2 tsp
Cumin powder-2 tsp
Pepper powder- 3-4tsp
few curry leaves
Salt - To taste.
Bread halwa:-
Bread 12 slices
Sugar-300 gm
Cardamom-5
Water-900 ml
Kesari powder-pinch
Ghee-2+2 tbsp
Cashews 20,raisins- 20.
Onion raitha Ingredients:-
Onion - 1/2 kg
Yogurt 1 kg
Green chilli chopped-2
Chopped Coriander leaves-2 tbsp
Salt - To taste.
Instructions
Mutton or chicken Briyani preparation:- Rinse mutton or chicken thoroughly and drain it. Mix curd,chilli powder,half briyani masala 2 tbsp gg paste and salt to taste. Marinate for 1 hour . Mean while cut all the veggies keep ready. Rinse and soak the rice .
Pressure cook the marinated mutton for 3 whistles.
Heat oil & ghee in a heavy bottomed vessel.add whole cardamom,Clove and cinnamon,then fry onion till golden brown.
Add remaining gg paste and home style briyani masala,green chilli,half chopped coriander and mint leaves.
Then add chopped tomatoes,1 tsp chilli powder and salt to taste.close with lid for five minutes,let the tomatoes cooked till soft.
Add cooked mutton,stir well and close, allow to boil.squeeze half lime juice.
Meanwhile boil enough water in a big vessel,add rice,salt, 1 tbsp oil, transfer the soaked rice ,cook till 75 percent done.Drain it.
Then cover the mutton masala with drained cooked rice ,squeeze half lime and smooth surface gently.
Sprinkle the saffron milk or colour added milk over the rice,add a tbsp of ghee.
Place the sheet of aluminium foil on top.cover and steam it over a very low flame.Allow it to dum for20 minutes.Switch off.
Keep closed for another 15 minutes.
Garnish the briyani with fried onions and nuts( optional)
While serving mix gentle,serve hot.Delicious Mutton dum briyani ready For chicken briyani ,directly cook chicken pieces in the briyani vessel for 5 -10 minutes.
For Dalcha :- In a pressure cooker add,toor dal,channa dal,,2tsp gg paste,mutton with bone,garam masala,1/2 tsp turmeric powder.cook till soft.
Open ,add all veggies,add all masala powders.Add some water and allow it to boil.Add tamarind water.Add salt to taste ,cook for 1 -2 whistle.
Mean while boil the eggs for roast.Peel the boiled eggs and put line with knife.
After pressure release open the cooked dalcha carefully.
Then heat oil in a pan,add mustard urad dal,dry chilli,curry leaves,when it splutters add chopped onion,1 tsp gg paste fry till light golden colour.Transfer to the dalcha and switch off. Ready. Serve with mutton briyani.
For egg pepper roast heat oil,add curry leaves add all masalas and salt to taste, stir once.Add the boiled egg gently roast it,switch off.garnish with coriander leaves. Ready.
For bread halwa or bread sweet ,toast all the bread slices with ghee and shred it.
Pour required water in a heavy sauce pan to boil,add pinch kesari powder, transfer the shredded toasted bread. Mix gently.
Add sugar, cardamom powder or (slit and put)mix till it dissolves.Mix till bread sweet get thick consistency.
Garnish with ghee fried cashews and raisins. Bread sweet ready.
For onion raitha slice the onions thin,add chopped chilli,coriander leaves,thick yogurt ,add salt to taste.mix ,ready! serve with briyani.
Now mutton briyani,dalcha,egg roast,onion raitha,,bread sweet ready.
Serve and enjoy these Eid special dishes.
Serve this traditional eid mutton dum briyani in banana leaf, raitha,egg roast, and bread sweet. Serve dalcha if need. You can add Chicken fry also in the menu .
