Ingredients Serving: 5

  1. Goat meat 1 kilogram
  2. White Potato 4 pieces
  3. Turmeric to coat the potatoes
  4. Saffron Basmati Rice 500 gram
  5. Fried Onion (Though I baked it for healthy version) Birista 150gm
  6. Albukhra (Dried Plum) 6-7 pcs (I did not find in my place so could not use)
  7. Biryani masala
  8. Green Cardamom 6pcs, Black Cardamom 1 pc, Cinnamon 3cm, Nutmeg 1/2 pc, clove 5-6 pc,mace 2 pcs,Shah jeera 2 gm,white pepper 3gm,black pepper 1/2 tsp,Fennel Seed 1 gm,Kewab Chini 2 gm(Optional)
  9. Marinating Mutton
  10. Plain Yogurt 100 gm,Salt ,Ginger Garlic Paste 20 gm (Equal amount),Biryani Masala 8 gm,Red Chili Powder 1 tsp,Birista 20 gm,
  11. To cook Rice with Flavor
  12. 6 pc Green Cardamom,Black Cardamom 2 pc,Cloves 7 gm,Bayleaf 3 gm, Fennel Seeds 7 gm
  13. For Aroma
  14. Milk 180 gm, Kewra water, Rose Water, Meetha Ator 5 drops
  15. Lime juice 5 gm (1/2 of lime)
  16. Warm Milk 20 gm
  17. 20 threads of saffron
  18. Ghee and butter approximately 1/2 cup
  19. To make mawa - 50 gm
  20. Milk powder 1 cup , Milk 1/2 cup and ghee 1 tbs

Instructions

  1. Peel the Potatoes and add turmeric and salt and fry them lightly brown.
  2. Make the fried onion- Birista. Take 2 Large onions and cut into thin slices, spread on a baking tray in one layer and I baked it in 355 Fahrenheit for 30 minutes .
  3. After 30 minutes Birista is ready for further use. from 100 gm of Onion 25 gm of Birista can be obtained.
  4. Now the Biryani Masala. Grind them to a fine powder.
  5. Coat well and marinate the mutton with all the ingredients as I mentioned and cover it for an hour .
  6. Wash and soak the rice for 30 minutes.Strain over a colander.
  7. Transfer the mutton in the pressure cooker with potato add 150 gm of water and cook for 30 minutes in medium low heat. Turn off the heat and let the pressure open on its own.
  8. The spices for the water to prepare the rice.
  9. Take 3 kg of water in a large vessel and throw all the spices into it and boil covered till the color turns pale yellow.
  10. Now take out all the spices from the water and this is ready to boil the rice.
  11. Throw all the rice in the water and cook covered till the rice is 80% done.
  12. Drain the excess water and the rice is ready for biryani.
  13. I made the mawa with Milk powder, Milk and Ghee in the microwave cooked for 3 minutes.
  14. Prepare the aromatic milk and saffron infused milk.
  15. By now the mutton is tender. Strain the liquid and separate the mutton . This liquid is called Yakhni which we need later.
  16. Now get ready to assemble. Grease the pan with ghee and bed with bayleaf.
  17. Add the mutton and potato.If you have albukhra add now.
  18. Add Birista
  19. Now pour the yakhni ( less than a cup) .Add the Biryani masla 1 tsp and then mawa.
  20. Now the rice and then lime juice, biryani masala .
  21. Again mawa followed by the saffron milk.
  22. Now gently flatten the mount and add the aromatic milk
  23. Cover with silver foil to seal it.
  24. Cover the lid. and let it cook for 30 minutes in medium heat.
  25. Switch off the oven and let it rest for more 15 more minutes. Now open the lid and the foil.
  26. This is the moment of truth. Enjoy with salad and Raita.
