ABOUT Chicken Mutabak/Murtabak.. RECIPE

Mutabak in arabic means 'folded'. A most popular street side snack in Southern Saudi Arabia and Yemen which is made up of originally eggs and cheese but now made with so many variations including mutton, chicken and both sweet and savoury versions too. Infact this spread to Southeast Asia in countries like Malaysia, Indonesia, Singapore and Brunei where it is more popular than in the Arab Peninsula.

Ingredients Serving: 8

  1. FOR THE DOUGH ; All purpose flour 2 cups
  2. Salt 1 tsp
  3. Water 3/4 cup
  4. Oil 1 tbsp
  5. Chicken mince 250 gm
  6. Onion chopped 1
  7. Leek finely chopped 1 1/2 cups
  8. Tomatoes chopped 2
  9. Ginger garlic paste 1 tsp
  10. Salt 1 tsp
  11. oil 2 tbsp
  12. Cumin powder 1 tsp
  13. coriander powder 1 tsp
  14. Blackpepper powder 1 tsp
  15. Green chillies chopped 2
  16. Eggs 2
  17. Cheese triangles 2-3

Instructions

  1. Knead a smooth dough and keep it covered for about 15 minutes.
  2. In a pan, heat oil and saute chopped onion.
  3. Add spices and mince to it now.
  4. Saute on a medium high heat until the raw smell disappears.
  5. Let it cool down.
  6. Start working on the dough now.
  7. Divide the dough into 4 parts.
  8. Make rectangular shapes of each part as thin as possible.
  9. Add beaten eggs and cheese to the mince and mix well.
  10. Spread half of this mix on the rolled out rectangular shape.
  11. Cover it with another one and seal the edges firmly by pinching it down or folding it up a little at the edges.
  12. Shallow fry in hot oil on a griddle on a low heat by keeping it covered with a lid.
  13. Each takes about 10-12 minutes to cook.
  14. Serve them hot cutting into small squares with lemon and raw less spicy green chillies.
  15. A yummy treat that can be served at iftaar.
