ABOUT Mutabal(eggplant dip) RECIPE

Mutabal or Mautabel is a middle eastern recipe,made with eggplant and a part of meeze platter. Both Mutabal and Baba Ganoush are made using roasted eggplants. The start of both recipes is to roast large globe eggplants on a direct flame, rotating it around until the skin is completely charred and the eggplant flesh is collapsing into a mush.

Ingredients Serving: 4

  1. Jumbo eggplant almost of 500 grams.
  2. Garlic cloves 7-8
  3. Tahini sauce 2tbsp
  4. Greek yogurt 4tbsp
  5. Extra virgin olive oil 1tbsp
  6. Rock salt to taste
  7. Parsley 1tbsp chopped
  8. Pomegranate molasses for garnish

Instructions

  1. Firstly get your eggplant roasted on direct flame.
  2. Next get your other ingredients ready like garlic cloves peeled .
  3. Scrape the burnt skin of eggplant and add tahini paste,garlic cloves,salt,parsley and Greek yogurt .
  4. Make a smooth creamy paste in a grinder.
  5. Garnish with pomegranate molasses and serve with crackers.
