Maisur masala dosa is very famous and tasty ,paper dosa is served with spicy maisur bhaji , which has prominant flavour of garlic and tomatoes , so let us start
10-15 dry whole chillies soaked in water for 15 minutes
1 tbsp sesame seeds
Salt to taste
Garlic cloves 12-15
Instructions
Soak the rice, chana daal , methi seeds and urad daal together for atleast 6 hours in and keep aside with lid
After 6 hours discard the water and make smooth paste in mixer grider by adding sugar and butter milk as required and make a batter with thick consistancy , add water if required
Add salt in the batter , and rest it for 5-6 hours to ferment the batter
Now prepare garlic chutney by blendind all the ibgredients together and keep aside
For making maisur bhaji , boil all the mix vegetables and mash them together
In a pan add 2 tbsp butter with 1 tsp oil and add onion to saute
As onions became tranlucent add tomato puree and cook for 2-3 minutes
Add boiled and mashed vegetables and add 2-3 tbsp or as required , garlic chutney and add all dry spices in it
Cook for 4-5 minutes
Sprinkle corriender leaves , maisur bhaji is ready
Now heat a nonstick griddle , make a dosa with batter
Add 1 tbsp of maisur bhaji on uper surface of dosa and spread evenly , sprinkle some corriender leaves , and roast till crisp and golden and roll the dosa
Serve the dosa hot , with msisur bhaji , snd sambhar
