place the flours is a large bowl after sieving
add salt to taste, sugar, yeast
knead into a soft dough using warm water as needed, creating enough gluten in the process

while the dough rests, pressure cook / boil the potatoes until they soften
let cool for a few minutes and then peel the skin
grate the potatoes and place them in a bowl

post the resting period, punch the dough once and knead it for a minute to release air bubbles
divide the dough into lemon sized balls and place them on a flour dusted plate
roll each ball into 2-3 centimetre diameter disc and place a tablespoon of potato mix in the center
fold any 2 side first making it look like a triangle
cover and seal well by folding in the third side
repeat the same process for the remaining dough
heat a tablespoon of oil in a non stick pan and pan fry the bolanis in batches on Low heat till each side shows brown marks
you can enjoy them while warm with your favourite curries, saalans, etc
