Ingredients Serving: 8

  1. 1 cup all purpose flour
  2. 2 cups whole wheat flour
  3. salt to taste
  4. 8-10 mili litre oil
  5. water as needed
  6. 1.5 teaspoon active dry yeast
  7. 2 teaspoon sugar
  8. 2 potatoes
  9. 200 grams of green onion
  10. 1.5 teaspoon red chilli flakes
  11. 1.5 teaspoon black pepper powder
  12. 1.5 teaspoon coriander powder
  13. 1/2 teaspoon turmeric powder
  14. 1 inch ginger grated

Instructions

  1. place the flours is a large bowl after sieving
  2. add salt to taste, sugar, yeast
  3. knead into a soft dough using warm water as needed, creating enough gluten in the process
  4. rest covered for an hour for the dough to rise
  5. while the dough rests, pressure cook / boil the potatoes until they soften
  6. let cool for a few minutes and then peel the skin
  7. grate the potatoes and place them in a bowl
  8. finely chop the green onions and add to the potatoes followed by salt to taste and the dry spices listed
  9. mix well to combine. add a teaspoon of oil if the mix is too stiff
  10. post the resting period, punch the dough once and knead it for a minute to release air bubbles
  11. divide the dough into lemon sized balls and place them on a flour dusted plate
  12. roll each ball into 2-3 centimetre diameter disc and place a tablespoon of potato mix in the center
  13. fold any 2 side first making it look like a triangle
  14. cover and seal well by folding in the third side
  15. repeat the same process for the remaining dough
  16. heat a tablespoon of oil in a non stick pan and pan fry the bolanis in batches on Low heat till each side shows brown marks
  17. you can enjoy them while warm with your favourite curries, saalans, etc
