ABOUT Ghee Fried Mixed Nuts... RECIPE

A basic recipe that is a must for this festive occasion in every Muslim household. We Hyderabadis do it this way in order to ease and quicken our cooking this Eid special dessert famously known as Sheer Khurma. The whole point in doing it is that it will come as handy when this dessert is being made throughout the Eid celebrations. All we need to do is, boil milk, add fried sewaiyan and cook required and then finally top it up with these crisp and crunchy mixed nuts. It becomes way lot easier this way and everytime guests show up, you can use them as needed. In the same way, sewaiyan can also be shallow fried in ghee and stored in airtight containers. Ingredients Serving: 10

  1. Almonds soaked 2 cups
  2. Pistachios soaked 1 cup
  3. Cashewnuts soaked 2 cups
  4. Ghee 2/3 cup

Instructions

  1. Soak the nuts in enough water for 3-4 hours.
  2. De skin them and cut them into thin slivers as possible.
  3. Spread them on a plastic sheet or a cotton cloth to dry.
  4. Let them dry for a day atleast to make them crisp and crunchy.
  5. After a day, shallow fry them in ghee either in deep pan or a kadai on a low heat.
  6. Keep turning every now and then to ensure even colouring and frying.
  7. Let cool for sufficient time and then store in airtight containers.
  8. Use these nuts in Eid special dessert Sheer Khurma.
