Cabbage koftas are a wonderful treat to every day dinner menu. Cabbage koftas are vegetarian alternative to meatball. The finely grated cabbage mixed with spices and besan (gram flour) and deep fried, then simmered in to the spicy gravy

Ingredients Serving: 4

  1. For the koftas:
  2. 3 cups cabbage finely chopped
  3. 1 cup Besan
  4. ¼ tsp Turmeric powder
  5. ¼ tsp red chili powder
  6. ¼ tsp garam masala
  7. 1 tsp carom seeds
  8. 1 tsp dahi
  9. pinch of Hing
  10. pinch of baking soda
  11. Salt as required
  12. ¼ cup Water
  13. Oil for shallow frying
  14. For the gravy: 3 tomatoes finely chopped
  15. 1 large onion finely chopped
  16. ½ inch Ginger crushed
  17. 3 garlic cloves crushed
  18. 1 black cardamom
  19. 2 green cardamoms
  20. 1 inch cinnamon
  21. 3 Cloves
  22. 1 Bay Leaf
  23. ¼ tsp Turmeric powder
  24. ¼ tsp red chili powder
  25. ½ tsp coriander powder
  26. 2 tbsp Oil
  27. ½ tsp kasuri methi
  28. 1 tbsp bitter
  29. 2 cups Water
  30. 3 tbsp Cream
  31. Salt as required
  32. coriander leaves (chopped for garnishing)

Instructions

  1. For the koftas: Mix the cabbage, carom seeds, powders, hung, curd and salt together well. Keep the mixture aside for thirty minutes.
  2. Add the besan flour and baking soda and mix well.
  3. Pour in the water if the mixture become too dry. Stir well.
  4. Drop spoonfuls of the cabbage mixture into a pan of hot oil.
  5. Fry the koftas until they are crisp and golden.
  6. Place the koftas on a sheet of kitchen paper to seep out excess oil.
  7. For the curry: Fry the bay leaf, cardamoms, cinnamon and cloves in hot oil for about ten seconds.
  8. Add the onions, stir and fry until golden.
  9. Add the ginger garlic paste and sauté for ten seconds.
  10. Add the tomatoes and powders and stir well.
  11. Remove the mixture from the stove, allow it to cool and the grind it into a smooth paste. Add ¼ cup of water before grinding.
  12. Heat the butter in a pan on a low flame.
  13. Stir in the paste and then add two cups of water.
  14. Add salt as required and allow the mixture to simmer until it thickens slightly.
  15. Add the cream and stir. Then, stir in the kasuri methi.
  16. Remove the curry from the stove and add the cabbage koftas.
  17. Garnish the kofta curry with coriander leaves.
  18. Serve with rice, naan or rotis.
