Ingredients Serving: 3

  1. Whole wheat flour 250 grams
  2. Instant active yeast 1 teaspoon
  3. Warm water 1/2 glass
  4. Salt 1/4 teaspoon
  5. Milk powder 1 tablespoon
  6. Butter 5 tablespoons
  7. Flour to dust
  8. For the filling
  9. paneer 100 grams
  10. Onion big sized 1 finely chopped
  11. Boiled black channa 1/4 cup ( optional )
  12. Minced garlic 1 tablespoon
  13. Tomato ketchup 2 tablespoons
  14. Red chilli powder 3/4 teaspoon
  15. Coriander powder 1/4 teaspoon
  16. Garam Masala Powder 1/2 teaspoon
  17. Salt as required

Instructions

  1. In a bowl , pour 1/4 glass warm water .
  2. Add salt .
  3. Add yeast . Mix gently and rest it for 5 minutes .
  4. The yeast gets activated by the time . This depends according to the environment ‘s temperature . It may vary accordingly.
  5. Add the milk powder .
  6. Add the flour gradually to the yeast mixture and mix to a smooth dough .
  7. Rest the dough for 15 minutes by keeping it covered .
  8. At this point , start preheating the cooker using salt . Preheat for 15 minutes in low heat .
  9. Let’s prepare the filling .
  10. Heat a tablespoon butter in a wok .
  11. Add the finely chopped onions and sauté till light brown .
  12. Cut the paneer into medium sized vertical strips .
  13. Add the paneer strips and toss it quickly .
  14. Add the boiled black channa .
  15. Pour tomato ketchup .
  16. Add red chilli powder .
  17. Add coriander powder .
  18. Add garam masala powder .
  19. Add required salt.
  20. Sauté and mix all together till the masala turns dry .
  21. Switch off the stove .
  22. Coming to the pastry dough , make equal sized balls ought of the dough .
  23. Roll the dough into medium thickness sheets .
  24. Cut them into equal square sized puff sheets .
  25. The sheets should be of medium thickness and not thin.
  26. Spread butter on top of the sheet .
  27. Place another sheet on top of the buttered sheet .
  28. This step is to get the crunchy layered puffs .
  29. Now take one tablespoon of cooled filling .
  30. Place the paneer filling on the pastry sheet .
  31. Bring one side to another and seal the edges by applying little water .
  32. Likewise prepare the remaining puffs .
  33. In a baking flat tray or tin , use a parchment paper .
  34. Dust flour .
  35. Place and arrange the raw puffs inside the tin.
  36. Place the baking tin into the preheated cooker .
  37. Cover and bake for 15 to 20 minutes .
  38. Brush butter on top of the puffs .
  39. The edges and corners turn crispy and brown indicating the puff is done .
  40. Paneer puffs are ready at the comfort of our home .
