ABOUT Machha ambila RECIPE

Ambila is a very popular Odia recipe. Machha ambila can be described as fish cooked in a light sweet-soury-tangy gravy. The combination of tamarind and jaggery gives the gravy an amazing flavour. It can be prepared in this same way using only vegetables too.

Ingredients Serving: 2

  1. Rohu fish pieces 4
  2. Onion 1 chopped
  3. Panch phoron 1 tsp
  4. Dry red chilli 2
  5. Turmeric powder 1 tsp
  6. Red chilli powder 1tsp
  7. Jaggery /sugar 3tbsp or according to taste
  8. Tarmarind soaked in warm water few
  9. Curry leaves 1spring
  10. Asafoetida 1/4tsp
  11. Mustard oil 2tbsp
  12. Salt as per taste
  13. Chopped coriander leaves for garnishing

Instructions

  1. Marinate fish pieces with salt and turmeric powder for 10mins.
  2. Heat mustard oil in a pan and lightly fry the fish pieces. Take out.
  3. Heat oil in the same pan, add panch phoron, dry red chilli, chopped onion, curry leaves. hing. Saute.
  4. When onion becomes light pink add the ginger garlic paste and saute till raw aroma goes.
  5. Add 1 cup tarmarind water,turmeric powder, chilli powder, salt.
  6. When boil comes add jaggery /sugar.
  7. Cook further few mins till jaggery melts.
  8. Add fish pieces and cook for another 5mins.
  9. Garnish with chopped coriander leaves.
  10. Serve hot with steamed rice.
  11. Panch phoron is a mixture of - Cumin, Brown Mustard, Fenugreek, Nigella and Fennel seeds.
