Ingredients Serving: 6
Chicken 500 gms
rice 3 cups
ginger garlic and chilli paste 2 tbsp
onion 6 sliced
bay leaf 4
cardamom 5-6
clove 5-6
black pepper 1 tsp
nutmeg
javitri
cinnamon stick 1 inch
biryani masala powder 2 tbsp
salt
turmeric powder 1 tbsp
red edible colour a pinch
coriander leaves chopped 1 tablespoons
mint leaves chopped 1 tablespoons
1 lemon
yoghurt 1 cup
ghee 3 tablespoons
oil
milk 1 cup
saffron 7-8 strands
Instructions
wash the chicken pieces
marinade them with ginger garlic chilli paste,salt,turmeric powder,yoghurt,red chilli powder and keep it for 45 min to 1 hr in a refrigerator
in a pressure cooker heat oil...add the whole garam masalas like cinnamon,cardamom,clove,black pepper,nutmeg,javitri and bay leaf and cook it for a minute
add sliced onion and sauté till it changes colour
add marinaded chicken and cook it well
sauté in between to avoid sticking at the bottom
cook till oil separates ...chicken is ready
in another pan heat sufficient oil and cook sliced onion till golden brown in colour...take them out
in the meantime soak the rice in water for half an hour
in another pan boil water and mix garam masalas and rice
when rice is half cooked discard the water
mix 1 tsp rice with red edible colour and keep aside
in a heavy bottom pan heat 1 tablespoons oil..
spread a layer of rice ...then a layer of chicken
then some fried onion and chopped coriander and mint leaves
add some biryani masala powder and again a layer of rice
repeat the process and top layer with rice...
add chopped coriander leaves,chopped mint leaves and sliced onion at the top
add ghee and 1 cup of saffron milk over the top
sprinkle the red colour mix rice over it
squeeze a lemon to it and cook it covered for 30 mins in simmer gas
serve hot with some fried onion topping n raita
