ABOUT chicken biryani RECIPE

rice cooked with chicken and masalas for that awesome flavour and taste

Ingredients Serving: 6

  1. Chicken 500 gms
  2. rice 3 cups
  3. ginger garlic and chilli paste 2 tbsp
  4. onion 6 sliced
  5. bay leaf 4
  6. cardamom 5-6
  7. clove 5-6
  8. black pepper 1 tsp
  9. nutmeg
  10. javitri
  11. cinnamon stick 1 inch
  12. biryani masala powder 2 tbsp
  13. salt
  14. turmeric powder 1 tbsp
  15. red edible colour a pinch
  16. coriander leaves chopped 1 tablespoons
  17. mint leaves chopped 1 tablespoons
  18. 1 lemon
  19. yoghurt 1 cup
  20. ghee 3 tablespoons
  21. oil
  22. milk 1 cup
  23. saffron 7-8 strands

Instructions

  1. wash the chicken pieces
  2. marinade them with ginger garlic chilli paste,salt,turmeric powder,yoghurt,red chilli powder and keep it for 45 min to 1 hr in a refrigerator
  3. in a pressure cooker heat oil...add the whole garam masalas like cinnamon,cardamom,clove,black pepper,nutmeg,javitri and bay leaf and cook it for a minute
  4. add sliced onion and sauté till it changes colour
  5. add marinaded chicken and cook it well
  6. sauté in between to avoid sticking at the bottom
  7. cook till oil separates ...chicken is ready
  8. in another pan heat sufficient oil and cook sliced onion till golden brown in colour...take them out
  9. in the meantime soak the rice in water for half an hour
  10. in another pan boil water and mix garam masalas and rice
  11. when rice is half cooked discard the water
  12. mix 1 tsp rice with red edible colour and keep aside
  13. in a heavy bottom pan heat 1 tablespoons oil..
  14. spread a layer of rice ...then a layer of chicken
  15. then some fried onion and chopped coriander and mint leaves
  16. add some biryani masala powder and again a layer of rice
  17. repeat the process and top layer with rice...
  18. add chopped coriander leaves,chopped mint leaves and sliced onion at the top
  19. add ghee and 1 cup of saffron milk over the top
  20. sprinkle the red colour mix rice over it
  21. squeeze a lemon to it and cook it covered for 30 mins in simmer gas
  22. serve hot with some fried onion topping n raita
