Ingredients Serving: 3

  1. Chicken 100gm boneless
  2. Egg 1no
  3. Cabbage 1/4 of a small cabbage, chopped finely
  4. Carrot 1no chopped finely
  5. Capsicum 1 chopped finely
  6. Ginger 2tbsp chopped
  7. Garlic 2tsp chopped
  8. Green chilli 2no chopped
  9. Dark soya sauce 2tsp
  10. Chilli vinegar 1tsp
  11. Cornflour 1tbsp (for slurry)
  12. Black pepper powder 2tsp
  13. Salt as per taste
  14. Oil 2tsp
  15. Chopped spring onion /coriander leaves for garnishing
  16. Fried noodles 1/2cup

Instructions

  1. Boil chicken for 4/5mins, switch off and strain.
  2. Let it cool. Keep the stock for later use.
  3. Shred the boiled chicken or chop into thin slices.
  4. Heat oil in a heavy bottomed pan, add ginger, garlic, green chilli, saute few secs.
  5. Add all chopped veggies. Mix well and cook for 1min.
  6. Add shredded chicken, salt, black pepper powder, mix well. Cook on high for 2/3mins.
  7. Pour the chicken stock. Cook till boil comes.
  8. Beat one egg and add slowly stirring in between.
  9. Add cornflour slurry, dark soya sauce, vinegar,chopped coriander leaves, mix well.
  10. Adjust spices.
  11. Serve hot with fried noodles. (Parboil noodles then deep fry).
