Take Cottage cheese / Paneer , and cut it in sheets.Keep it in a Tray, keep it aside.
Prepare stuffing - Heat some oil in a pan. add ginger garlic paste, chopped onions and chopped green chillies, saute.
Meanwhile place a thumbsized piece of coal on gas stove.
Add boiled and mashed chickpeas in kadhai.you can add finely chopped veggies of your choice (optional) too. Add red chilli powder, salt, turmeric powder, coriander powder, gram masala and roasted cumin seeds.. Stir. Switch off the flame, let it cool down.
When coal starts glowing. Keep it in a bowl beside stuffing mixture in kadhai. Add teaspoon of ghee on a charcoal. You will see a thick rich smoke billow up instantly. Then immediately cover the khadhai with lid yo give the mixture smoky flavour.
Take one sheet of paneer, spread stuffing on it.
Cover it with another sheet like sandwich. Like wise prepare all 'Sulle'. Keep it in same Tray.
For marination :-Take a bowl, add hung curd, Red chilli powder, blackpepper, salt, turmeric powder, red food colour, chaat masala, mix well
Spread this prepared marination on both side of stuffed paneer sheets by flipping it gently to avoid breaking.
Cover the tray , and refrigerate it for approx half an hour.
Take these out from refrigerator, heat a nonstick Tawa or grilling pan, or simple pan . Sprinkle some oil. Add these sulle gently. Cook it from all sides by flipping gently.
Take out in a plate. Cut each piece in two triangles. squeez some fresh lemon juice on it, serve hot with green mint chutney or barbeque dip.
