Ingredients Serving: 2

  1. Fine rava / Bombay rava 1 cup
  2. Water 1 1/4 cup
  3. Milkmaid or milk 1/4 cup
  4. Salt 1/4 tsp
  5. For stuffing...
  6. Jaggery powder 3/4 cup
  7. Grated coconut 3/4 cup
  8. Dry fruits powder 4 tsp
  9. Chopped dry fruits and raisins mix 1/4 cup
  10. Cardamom powder 1 tsp
  11. Ghee 1/4 cup
  12. For garnish..
  13. Grated coconut 2 tsp
  14. Pistachio finely chopped 1 tsp
  15. Ghee 2 tsp

Instructions

  1. HEAT 1 1/4 CUP WATER
  2. WHEN IT STARTS BOILING ADD 1/4 TSP SALT, 1 CUP FINE RAVA
  3. MIX WELL FOR A MINUTE, TURN OFF THE FLAME, COVER AND SET ASIDE
  4. TO MAKE THE STUFFING, GRATED COCONUT 3/4 CUP
  5. JAGGERY 3/4 CUP
  6. CARDAMOM POWDER 1 TSP, DRY FRUITS POWDER 4 TSP, CHOPPED FRUITS AND RAISINS 1/4 CUP
  7. COMBINE WELL
  8. ADD 1/4 CUP CONDENSED MILK TO SMOOTH RAVA
  9. MIX AND KNEAD WELL TO AVOID LUMPS
  10. SOFT BUT STIFF DOUGH IS READY, ALLOW REST FOR 5 MINUTES
  11. IN THE MEANTIME BOIL SOME WATER IN IDLI VESSEL (STEAMER)
  12. OPEN THE LID, CHECK THE SOFTNESS, APPLY GHEE TO PALM
  13. TAKE SMALL PORTIONS AND MAKE LEMON SIZED BALLS
  14. AGAIN APPLY GHEE TO PALM AND START FLATTEN THE BALLS
  15. KEEP 1 TSP FULL OF STUFFING AT THE CENTRE
  16. BRING THE EDGES TOGETHER AND SEAL IT
  17. PLACE THE GUJIYAS TO COOK IN STEAM, CLOSE THE LID
  18. AFTER 15 MINUTES CHECK IT BY INSERTING A FORK OR KNIFE, IF IT COMES OUT CLEAN, GUJIYAS ARE READY
  19. TRANSFER THEM TO SERVING PLATE
  20. GARNISH WITH GRATED COCONUT, CHOPPED PISTACHIO AND ALMOND, AND GHEE
