Nendra bananas halwa is famous in Kerala and Mangalore. Here it is small over ripe bananas used to make very delicious, flavourful halwa.

Ingredients Serving: 10

  1. Small banana paste 2 cup
  2. Sugar 1 1/2 cup
  3. Cardamom seeds 1/2 tsp
  4. Cashews few
  5. Raisins few
  6. Almonds finely chopped 1 tsp
  7. Ghee 3/4 cup
  8. Food color optional

Instructions

  1. PEEL THE BANANAS
  2. SLICE THEM
  3. ADD INTO MIXER GRINDER
  4. GRIND TO FINE PASTE WITHOUT USING WATER
  5. HEAT 2 TSP OF GHEE IN HEAVY BOTTOMED PAN
  6. ROAST FEW CASHEWS TILL GOLDEN BROWN.
  7. KEEP THEM ASIDE
  8. TO THE SAME PAN POUR THE GROUND BANANA PASTE
  9. KEEP STIRRING IN LOW FLAME
  10. ADD A PINCH OF SALT AND MIX WELL
  11. WHEN IT STARTS THICKENING, COMBINE SUGAR AND CARDAMOM SEEDS
  12. STIR CONTINUOUSLY, SUGAR STARTS MELTING
  13. BUBBLE STARTS
  14. ADD SOME GHEE EVERY NOW AND THEN, CONTINUE STIRRING
  15. HALWA ABSORBS GHEE
  16. THE TEXTURE CHANGES LITTLE GLOSSY
  17. HALWA LEAVES THE GHEE, GREASE 1 TSP FRESH GHEE TO THE TRAY
  18. ADD ROASTED CASHEWS AND RAISINS, MIX WELL, CONTINUE STIRRING STILL 5 MORE MINUTES
  19. TRANSFER ON TO GREASED PLATE
  20. USING THE FLAT SPATULA LEVEL THE SURFACE
  21. LEVEL EVENLY
  22. SPRINKLE FINELY CHOPPED ALMONDS, PRESS IT
  23. AFTER COOL MARK IN DESIRED SHAPE, SERVE
