Ingredients Serving: 4

  1. Hash Brown: 2 potatoes, peeled
  2. 2 tbsp butter
  3. Garlic powder 1/2 tsp
  4. Salt and pepper to taste
  5. 1/2 cup shredded cheese
  6. Cauliflower Puree: 1 cup cauliflower florets
  7. 1/2 cup whole milk
  8. Salt and pepper to taste
  9. Butter 1 tbsp
  10. Orange confit: Orange peel (of 1 Orange)
  11. Rice wine vinegar 1/4 cup
  12. Sugar 1 tsp
  13. Salt 1/4 tsp

Instructions

  1. ORANGE CONFIT: REMOVE THE WHITE PART OF ORANGE PEEL
  2. CHOP FINELY
  3. ADD IN RICE WINE VINEGAR
  4. ADD SALT AND SUGAR
  5. KEEP ASIDE FOR MINIMUM AN HOUR (THE LONGER, THE BETTER)
  6. HASH BROWN: SHREAD THE POTATOES
  7. KEEP IN COLD WATER FOR 20 MINUTES
  8. WASH AGAIN WITH FRESH COLD WATER. DRAIN WELL.
  9. COOK POTATOES IN LITTLE BUTTER FOR ABOUT 4-5 MINUTES
  10. THEY SHOULD BE BIT FIRM
  11. OVER HOT POTATOES ADD SALT, PEPPER, ONION POWDER AND SHREDDED CHEESE
  12. MAKE ROUNDLES
  13. AND REFRIGERATE FOR 1 HOUR
  14. FRY IN MEDIUM HOT OIL
  15. UNTIL GOLDEN BROWN
  16. CAULIFLOWER PUREE: FINELY CHOP CAULIFLOWER HEAD
  17. COOK CAULIFLOWER, MILK, SALT AND PEPPER FOR 7-8 MINUTES
  18. PUREE IT
  19. ADD BUTTER AND BLEND LITTLE MORE
  20. TO SERVE: LAYER CAULIFLOWER PUREE
  21. SPRINKLE ORANGE CONFIT
  22. PLACE THE HASH BROWN AS YOU LIKE
