ABOUT Creamy Curd Rice RECIPE

Its everyones favourite. Very comfortable food for everyone. I could say its restaurant style curd rice with few modifications. I have added 1/2 tsp ajwain and 1/2 tsp jeera to enhance easy digestion of food. Always carrot, fresh grapes and pomogranate seeds should be added for garnish. Never mix them with curd rice as the colour will change which is not recommended.

Ingredients Serving: 4

  1. Raw rice 1 cup
  2. Fresh Curd 2 cups
  3. Butter 1 tbsp optional
  4. Salt
  5. For Tadka
  6. Sesame oil 1 tbsp
  7. Mustard 1 tsp
  8. jeera 1/2 tsp
  9. Ajwain 1/2 tsp
  10. Hing
  11. Ginger finely chopped
  12. Green chilli 1 finely chopped
  13. curry leaves
  14. Coriander leaves
  15. Cashews and Raisin mix
  16. Garnish with Pomogranate seeds/fresh grapes/grated carrot

Instructions

  1. RINSE AND BOIL 1 CUP RAW RICE WITH 5 CUPS OF WATER
  2. STIR OCCASIONALLY AND CHECK IF THE RICE IS COOKED
  3. RICE SHOULD BE MUSHY. STRAIN STARCH COMPLETELY. USE LADLE TO MAKE A HOMOGENEOUS MIXTURE
  4. TAKE MUSTARD, 1 TSP JEERA AND AJWAIN MIX, HING, FINELY CHOPPED GINGER AND GREEN CHILLI, CASHEW RAISIN MIX,CURRY AND CORIANDER
  5. ADD OIL IN TADKA PAN, ADD MUSTARD FIRST. WHEN IT CRACKS, ADD DRY INGREDIENTS AND THEN GREENS
  6. ADD 1 TBSP BUTTER(OPTIONAL)
  7. ADD TADKA
  8. MIX WELL. REST IT FOR 10-15 MINUTES TO COMPLETELY COOL THE MIXTURE
  9. ADD 2 CUPS FRESH CURD TO COMPLETELY COOLED RICE
  10. ADD REQUIRED SALT
  11. MIX WITHOUT LUMPS
  12. SERVE CHILLED
