Ingredients Serving: 8

  1. Watermelon rind 3 cup
  2. Grated Coconut 1/4 cup
  3. Salt to taste
  4. water 1/4 cup
  5. Chopped onion 1 cup
  6. For seasoning...
  7. Mustard seeds 1/2 tsp
  8. Red chilli pieces
  9. Urad dal 1/2 tsp

Instructions

  1. SEPARATE THE WATERMELON RIND OR THE WHITE PORTION
  2. CHOP THE RIND INTO SMALL PIECES
  3. PEEL AND CHOP ONION
  4. HEAT OIL, ADD MUSTARD SEEDS
  5. AFTER SPLUTTER ADD RED CHILLI, URAD DAL AND FRY TILL GOLDEN BROWN
  6. ADD CURRY LEAVES AND CHOPPED ONION
  7. FRY TILL TENDER AND ADD WATERMELON RIND
  8. ADD SALT AND WATER, THEN SAUTE AND CLOSE THE LID
  9. OPEN THE LID, CHECK COOKNESS, ADD COCONUT AND SAUTE, AFTER WATER COMPLETELY ABSORBED SWITCH OFF IT
  10. PLACE SOME PORTION INTO A PLATE
