ABOUT Vegetarian Egg Curry RECIPE

It's a vegetarian delight, unique and different, soft tender eggless potato paneer eggs, fairly easy to do a fusion, food lovers will love this magical recipe of mine

Ingredients Serving: 5

  1. Oil 1 karchi for dish and for deep frying as needed
  2. Water 1/2cup
  3. Potatoes 3-4medium sized
  4. Paneer 250gm (125gm for egg yolk mixture and 125gm for white potato mixture)
  5. Maida 1-2teaspoon
  6. Cournflour 1teaspoon
  7. Tomato puree 3/4cup
  8. Salt to taste
  9. Red chillie 1/2teaspoon
  10. Turmeric powder 1/4teaspoon for dish and 1/4teaspoon to be mixed with crumbled paneer for egg yolk
  11. Garam masala 1/2teaspoon
  12. Black pepper powder 1/4teaspoon
  13. Coriander powder 1/2teaspoon
  14. Cumin seeds 1/2teaspoon
  15. Green chillies chopped 1-2
  16. Coriander leaves chopped for garnishing
  17. Onion paste( 3-4 onions pureed in a mixer grinder )
  18. Pinch of red food colour
  19. Saunf 1/2teaspoon

Instructions

  1. HEAT 2 TBSP OIL IN A KADHAI
  2. ADD 1/2 CUP ONION PASTE, FRY TILL LIGHT PINK
  3. MIX 1/2 TSP CUMIN SEEDS WITH THE DRY MASALAS
  4. ADD THIS TO THE KADHAI, MIX
  5. WHEN OIL STARTS LEAVING THE SIDES, ADD 3/4 CUP TOMATO PUREE
  6. MIX 1/2 TSP FENNEL SEEDS & SALT TO TASTE
  7. ADD THIS TO THE MASALA WITH 1/2 CUP WATER
  8. ADD A PINCH OF RED FOOD COLOUR
  9. ADD 1/4 CUP CORIANDER & 1-2 GREEN CHILLIES, COOK FOR 1-2 MINS, TAKE OFF HEAT
  10. GRATE 3-4 BOILED POTATOES
  11. ADD 50 GMS CRUMBLED COTTAGE CHEESE, MIX
  12. ADD 1 TSP CORNFLOUR, 2 TSP FLOUR & SALT, MAKE A SOFT DOUGH
  13. MAKE A YELLOW DOUGH WITH 150 GMS COTTAGE CHEESE, 1/4 TSP TURMERIC, SALT
  14. SHAPE BOTH DOUGHS INTO BALLS
  15. STUFF A YELLOW BALL INTO A WHITE BALL LIKE THIS
  16. SHAPE ALL EGGS, ROLL IN FLOUR, REST FOR 5-10 MINS
  17. THEY ARE READY TO FRY
  18. PUT INTO HOT OIL
  19. FRY TILL GOLDEN BROWN & CRISP
  20. CUT FROM THE CENTRE
  21. TAKE OUT IN A SERVING DISH, PUT READY CURRY ON TOP
