Oil 1 karchi for dish and for deep frying as needed
Water 1/2cup
Potatoes 3-4medium sized
Paneer 250gm (125gm for egg yolk mixture and 125gm for white potato mixture)
Maida 1-2teaspoon
Cournflour 1teaspoon
Tomato puree 3/4cup
Salt to taste
Red chillie 1/2teaspoon
Turmeric powder 1/4teaspoon for dish and 1/4teaspoon to be mixed with crumbled paneer for egg yolk
Garam masala 1/2teaspoon
Black pepper powder 1/4teaspoon
Coriander powder 1/2teaspoon
Cumin seeds 1/2teaspoon
Green chillies chopped 1-2
Coriander leaves chopped for garnishing
Onion paste( 3-4 onions pureed in a mixer grinder )
Pinch of red food colour
Saunf 1/2teaspoon
Instructions
HEAT 2 TBSP OIL IN A KADHAI
ADD 1/2 CUP ONION PASTE, FRY
TILL LIGHT PINK
MIX 1/2 TSP CUMIN SEEDS WITH
THE DRY MASALAS
ADD THIS TO THE KADHAI, MIX
WHEN OIL STARTS LEAVING THE
SIDES, ADD 3/4 CUP TOMATO
PUREE
MIX 1/2 TSP FENNEL SEEDS &
SALT TO TASTE
ADD THIS TO THE MASALA WITH
1/2 CUP WATER
ADD A PINCH OF RED FOOD
COLOUR
ADD 1/4 CUP CORIANDER & 1-2
GREEN CHILLIES, COOK FOR 1-2
MINS, TAKE OFF HEAT
GRATE 3-4 BOILED POTATOES
ADD 50 GMS CRUMBLED
COTTAGE CHEESE, MIX
ADD 1 TSP CORNFLOUR, 2 TSP
FLOUR & SALT, MAKE A SOFT
DOUGH
MAKE A YELLOW DOUGH WITH
150 GMS COTTAGE CHEESE, 1/4
TSP TURMERIC, SALT
SHAPE BOTH DOUGHS INTO
BALLS
STUFF A YELLOW BALL INTO A
WHITE BALL LIKE THIS
SHAPE ALL EGGS, ROLL IN
FLOUR, REST FOR 5-10 MINS
THEY ARE READY TO FRY
PUT INTO HOT OIL
FRY TILL GOLDEN BROWN &
CRISP
CUT FROM THE CENTRE
TAKE OUT IN A SERVING DISH,
PUT READY CURRY ON TOP
