Ingredients Serving: 5

  1. Grated Raw Turmeric (haldi) -2.5 cups
  2. Beaten yogurt -300 gm
  3. Chopped onion -1 Medium
  4. Chopped garlic - 8-9 Cloves
  5. Spring onions -1/2 cup
  6. Chopped cauliflower -1/2 cup
  7. Boiled Peas - 1/2 cup
  8. 4 tbsp Chopped Coriander leaves
  9. Green chilies - 4-5 , chopped
  10. Coriander powder -1 tsp
  11. Kitchen king Masala - 1.5 tsp
  12. Garam Masala -1/2 tsp
  13. Salt to taste
  14. Kashmiri red chili powder -1 tsp
  15. Clarified Butter (ghee) -1/2 cup+3 tbsp
  16. Mustard seeds -1/2 tsp
  17. Bay leaf -2

Instructions

  1. HEAT 1/2 CUP OF GHEE IN A KADHAI
  2. ADD GRATED HALDI
  3. STIR WELL
  4. ROAST HALDI FOR 30 MINUTES OVER LOW-MEDIUM FLAME
  5. REMOVE HALDI AND KEEP IT ASIDE
  6. NOW FRY CAULIFLOWER IN REMAINING GHEE FOR 8-10 MINUTES IN SAME PAN OVER LOW-MEDIUM HEAT
  7. TAKE CAULIFLOWER OUT AND KEEP IT ASIDE
  8. ADD REMAINING GHEE IN THE PAN.ADD MUSTARD SEEDS, BAY LEAF. ALLOW TO SPLUTTER
  9. ADD GARAM MASALA AND MIX WELL
  10. ADD GARLIC AND SAUTE UNTIL AROMATIC
  11. ADD 1 MEDIUM CHOPPED ONIONS AND SAUTE UNTIL TRANSLUCENT
  12. ADD 4-5 GREEN CHILIES
  13. SAUTE FOR 2 MINUTES
  14. ADD 1 TSP OF CORIANDER POWDER
  15. ADD 1.5 TSP KITCHEN KING MASALA
  16. ADD 1 TSP KASHMIRI RED CHILI POWDER. MIX WELL FOR 1 MINUTE
  17. MIX ROASTED HALDI
  18. MIX PROPERLY WITH FEW DROPS OF WATER
  19. ADD FRIED CAULIFLOWER
  20. ADD BOILED PEAS AND MIX WELL
  21. COOK FOR 1-2 MINUTES
  22. ADD SPRING ONIONS AND SAUTE FOR 7-8 MINUTES
  23. ADD SALT AND MIX
  24. ADD 300 G BEATEN YOGURT AND MIX WELL
  25. STIR CONTINUOUSLY FOR 4-5 MINUTES OVER HIGH FLAME
  26. ADD WATER AS REQUIRED.SIMMER AND COOK FOR 6-7 MINUTES
  27. ADD CORIANDER LEAVES , MIX AND SWITCH OFF THE GAS
  28. GARNISH WITH CHOPPED SPRING ONIONS. SERVE HOT
