ABOUT Pav Bhaji Samosa RECIPE

A Samosa, sambusa, or samboksa is a friend or baked dish with a savoury filling, such as spiced potatoes, onions peas, lentils, macaroni, noodles, cheese, minced lamb or minced beef. Pine nuts can also be added. Samosa a crispy and spicy deep fried snack that has an crisp and flaky outer layer made of maida and rich filling of mashed vegs.

Ingredients Serving: 8

  1. For Samosa Covering
  2. Flour 250 gms
  3. Melted ghee 1/4 cup
  4. Carom seeds 1 tsp
  5. Salt to taste
  6. Water as required
  7. For Filling
  8. Amchur powder 1 tsp
  9. Ghee 1.5 tbsp
  10. Fresh coriander leaves chopped 1/4 cup
  11. Fresh ginger grated 1 tbsp
  12. Green Chili chopped 1
  13. Pav bhaji masala 2 tbsp
  14. Salt to taste
  15. Asafoetida 1 /4 tsp
  16. Boiled potatoes chopped 250 gms
  17. Steamed and finely chopped peas, carrots, cauliflower florets, Green capsicum - 1 cup
  18. Cumin seeds 1 tsp

Instructions

  1. IN A BOWL, MIX 250 GMS FLOUR, 1/4 CUP MELTED GHEE, 1 TSP CAROM SEEDS, 3/4 TSP SALT
  2. CRUMBLE MIXTURE WITH FINGERTIPS, ADD COLD WATER AS REQUIRED, KNEAD INTO A TIGHT DOUGH
  3. COVER WITH A DAMP CLOTH, REST DOUGH FOR 15 MINS
  4. HEAT GHEE IN A PAN. ADD 1 TSP CUMIN, 1/4 TSP HING, 2 GREEN CHILIES, 1 TBSP GRATED GINGER
  5. ADD 250 BOILED POTATOES, 1 CUP STEAMED PEAS, CARROTS, CAULIFLOWER, CAPSICUM
  6. FRY FOR 2 MINS, TAKE OFF HEAT, MIX FRESH CORIANDER LEAVES
  7. ADD 2 TBSP PAV BHAJI MASALA, 1 TSP AMCHUR POWDER, SALT AND MIX WELL
  8. DIVIDE DOUGH INTO EQUAL PORTIONS, SHAPE INTO BALLS, ROLL INTO OBLONG POORIS
  9. CUT INTO HALVES, DAB WATER ON THE EDGES
  10. SHAPE INTO A CONE
  11. FILL IN A 1-2 TBSP OF POTATO STUFFING, PLEAT FROM THE EDGES AND SEAL
  12. DEEP FRY IN HOT OIL OVER LOW HEAT
  13. FRY UNTIL GOLDEN BROWN AND CRISP WITH 2-3 GREEN CHILIES
  14. SERVE HOT WITH KETCHUP AND CHUTNEY
