Ingredients Serving: 4

  1. Eggplant (baigan) 1
  2. Vegetable oil 3-4 tablespoon
  3. Pinch of Asafoetida
  4. Cumin seeds 1/2 teaspoon
  5. Finely chopped onions 4
  6. Finely chopped tomatoes 3
  7. Deggi mirch powder 2 teaspoon
  8. Green chilli slit 1
  9. Garam masala powder 1/2 teaspoon
  10. Coriander powder 1 teaspoon
  11. Salt to taste 
  12. Chopped green coriander leaves+ for garnishing 3 tablespoon

Instructions

  1. Brush eggplant with oil
  2. Roast it on a gas burner
  3. Once done, transfer it to a Bowl full of water
  4. Peel off the charred skin
  5. Chop the flesh
  6. Heat 3 tablespoon oil in a wok, add A pinch of asafoetida and 1/2 teaspoon of cumin seeds
  7. Add 4 chopped onion, cook For 2-3 minutes
  8. Add salt to taste and 1 teaspoon coriander powder
  9. Add 2 teaspoon red chilli powder
  10. Add 3 chopped tomatoes
  11. Add chopped eggplant, and cook for five minutes on low flame
  12. Add 2 tablespoon fresh coriander leaves.
  13. Add slit green chilli and 1/2 teaspoon garam masala powder
