  1. Long brinjals 2 medium
  2. Tomato concasse 3 tablespoons
  3. Yellow zucchini 1 medium
  4. Olive oil 1 tablespoon
  5. Onions sliced 2 medium
  6. Garlic chopped 6 cloves
  7. Salt to taste
  8. Black pepper powder to taste
  9. Green capsicums cut into cubes 1 medium
  10. Tomato puree 3 tablespoons
  11. Green zucchini 1 medium
  12. Dried mixed herbs 1/4 teaspoon
  13. Basil leaves hand torn a few

Instructions

  1. BROWN 6 GARLIC CLOVES IN 1 TBSP HOT OIL
  2. ADD 2 SLICED ONIONS, SAUTÉ TILL TRANSLUCENT
  3. ADD 1 GREEN ZUCCHINI
  4. ADD 1 YELLOW ZUCCINI
  5. ADD 2 BRINJALS
  6. ADD SALT & BLACK PEPPER
  7. COVER & COOK FOR 3-4 MINS
  8. ADD 1 GREEN CAPSICUM, COOK FOR 5 MINS
  9. ADD 2 TBSP TOMATO PURÉE
  10. ADD 3 TBSP PEELED & CHOPPED TOMATOES
  11. ADD 1/4 TSP THYME
  12. ADD 1/4 TSP MIXED HERBS, MIX
  13. ADD BASIL LEAVES, TAKE OFF HEAT
  14. SERVE HOT WITH GARLIC BREAD
